Yum, almond lace cookies! Those are so delicate and crispy like little golden nets of caramelized sugar and almonds, and they practically melt in your mouth.

What are Lace Cookies?

Lace cookies aren’t your typical cookie. They’re not thick, soft, or chewy. Instead, they’re wafer-thin, crisp, and so light they almost look like stained glass when you hold them up to the light. That’s exactly why they’re called “lace” cookies!

These cookies are made with a simple base of butter, sugar, and salt, with different recipes adding ingredients like oats, flour, or nuts. No matter the variation, their signature trait is the delicate, see-through texture that makes them so elegant.

Are almond lace cookies the same as Florentine cookies?

Great question!  Florentine cookies and almond lace cookies look very similar, but they’re not the same. Here’s the breakdown:

Almond Lace Cookies are made from butter, sugar, flour, and sliced almonds (sometimes with corn syrup or honey). It is very thin, crisp, and caramelized. Texture is more delicate and “see-through,” like lace. And, usually kept the simple original plain or with a light chocolate drizzle.

Meanwhile, Florentine cookies originated from Italy/France. Made with candied fruit, nuts (often almonds or hazelnuts), honey/syrup, and sometimes cream or butter. It also has a thicker and chewier texture compared to almond lace cookies.

Let’s Make Almond Lace Cookies

First, melt the butter.
Place the butter in a small saucepan over low heat and let it melt gently. Once melted, add the light brown sugar, granulated sugar, and milk. Stir slowly and consistently until the sugars have dissolved and the mixture looks smooth and glossy. This step usually takes 2–3 minutes.

Next, mix in the dry ingredients.
Remove the pan from the heat and pour the mixture into a medium-sized bowl. Stir in the vanilla extract, salt, and ground almonds (almond flour) until everything is fully combined. The batter will look thin at first, but don’t worry—it will thicken slightly as it rests. Please leave it to stand for about 10 minutes before baking.

Meanwhile, prepare the oven.
While the batter is resting, preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat to ensure the cookies lift off cleanly.

Now, scoop the batter.
Using a teaspoon, scoop small amounts of the batter and place them onto the prepared baking sheet. Be sure to leave at least 3 inches (7–8 cm) between each scoop, because these cookies spread a lot as they bake into their signature lacy shape.

Bake until golden.
