How to Make Beef Floss-rolled Bread

First things first, in a mixing bowl, combine flour, sugar, yeast, salt, and milk powder. Add egg and cold water, then knead with a hand mixer (or by hand) until the dough comes together.

Then, add the butter and continue kneading until the dough reaches the windowpane stage — when it stretches thin without tearing easily.

Next, shape the dough into a ball, place it in a bowl, cover with a damp cloth, and let it rest for 30 minutes.

Sprinkle flour on your work surface and roll the dough into a 28×28 cm rectangle. Transfer to a baking sheet lined with parchment paper.

Try to prick the surface with a fork, brush with egg wash, and sprinkle red pepper, green onion, and sesame seeds. Cover and rest for 1 hour.

Now, preheat the oven to 356°F (180°C). Bake for 17–20 minutes, or until golden brown. While the bread bakes, mix mayonnaise and condensed milk in a bowl. Set aside.

Assemble the Roll

Once baked, remove the bread from the baking sheet and peel off the parchment paper. Let it cool until warm, not hot. Spread the mayonnaise mixture evenly, then sprinkle with beef floss.

Roll the bread tightly using the parchment paper as a guide. Push with a metal ruler using one hand while pulling the parchment with the other. Let it rest for 10 minutes to set.
Finally, cut the roll into six pieces. Spread a little mayonnaise mixture on the edges and coat with more beef floss.

    Bread

    • 300 g High Protein Flour
    • 50 g Sugar
    • 4 g Instant Dry Yeast
    • 3 g Salt
    • 10 g Milk Powder
    • 1 Egg
    • 120-140 g Cold Water see note
    • 35 g Unsalted Butter room temperature

    Sauce

    • 100 g Mayonnaise
    • 65 g Sweetened Condensed Milk

    Topping

    • 250 g Beef Floss
    • 2 Red Pepper
    • 1 Green Onion
    • 1 tbsp Sesame Seeds
    • Egg Wash

    Instructions

    1. In a mixing bowl, combine flour, sugar, yeast, salt and milk powder.

    2. Add egg and cold water then knead with a hand mixer until well combined.

    3. Add butter and knead again until windowpane.

    4. Round into a ball then place it in a bowl, cover with wet cloth and rest it for 30 minutes.

    5. After 30 minutes, sprinkle flour on working surface then roll the dough with a rolling pin into 28×28 cm rectangle then transfer the dough to a a baking sheet lined with parchment paper.

    6. Prick the entire surface of the dough with a fork then brush it egg wash and sprinkle with red pepper, green onion and sesame seeds. Cover and rest it for an hour.

    7. Preheat oven to 356℉ or 180℃, then bake the bread for 17-20 minutes.

    8. While the bread is being baked, make the sauce by combining mayonnaise and condensed milk in a bowl and set aside.

    9. When done baking, remove the bread from baking sheet and remove the parchment paper and cool it until it is warm.

    10. Spread the mayonnaise mixture then sprinkle with beef floss all over the bread then roll it.

    11. Push the bread with metal ruler with one hand and pull the bottom of the parchment paper with other hand then let it sit for 10 minutes.

    12. Cut the bread into six then spread the edges with mayonnaise mixture and beef floss

    13. Serve and enjoy!
