This Broccoli Potato Cheddar Soup is one of those recipes I turn to again and again, especially on those “nothing sounds good” days. It’s hearty enough to be a meal on its own, packed with vegetables, and finished with a rich cheddar cheese sauce that brings everything together.

By the way, I know it is off the topic, but as of today 30th of July 2025, it’s important to take a moment to acknowledge the devastating news that happened today. A powerful 8.8 magnitude earthquake struck near Russia’s Kamchatka Peninsula, triggering tsunami warnings across the Pacific. Coastal areas in Russia, Japan, Hawaii, and parts of the U.S. West Coast were affected. Though most warnings have now been lifted, the event is a stark reminder of how quickly nature can shift our daily routines. Our thoughts go out to everyone affected. Take care, everyone.

Speaking to the devil, back to the recipe. As a mom, I love that this soup gets my family (including my toddler!) to happily eat their veggies, without complaints. The potatoes give it that cozy, belly-warming vibe, while the broccoli and carrots add freshness and nutrition. And let’s be honest: melted cheese makes everything better.   • Grated Parmesan Cheese; Parmesan adds a salty, nutty umami note that enhances the flavor complexity of the soup.

  • Broccoli Florets; The star vegetable! Broccoli adds freshness, color, fiber, and a slightly earthy flavor that pairs beautifully with cheese.
  • medium Potatoes, cubed; add heartiness, creaminess (when partially broken down), and make the soup more filling. They also help naturally thicken the broth.
  • Carrots, cubed; For a touch of sweetness, color, and added nutrients. Carrots round out the vegetable medley and contrast the green broccoli.
  • Onion, sliced; Adds a savory-sweet base flavor that builds the soup’s depth. Sautéing brings out its natural sweetness.
  • Garlic, minced; Enhances the soup with aromatic, garlicky warmth. A little goes a long way.
  • Water
    Used to boil the vegetables.
  • Chicken Stock Powder; Boosts flavor in the water to simulate chicken broth. Adds savory umami and saltiness to the soup.
  • Salt; Enhances all the flavors. Start with less and adjust to taste after cheese is added.
  • Black Pepper; Adds a gentle kick and depth. Balances the creamy elements with a bit of spice.
  • Dried Thyme; A touch of earthiness that complements the broccoli and cheese. It adds subtle herbaceous warmth.

How to Make Broccoli Potato Cheddar Soup

Cheddar Soup

Start by making the creamy cheddar base. Melt the butter in a pan or saucepan over medium heat. Stir in the flour and cook for about 1 minute to form a roux.

Gradually pour in the milk while continuously stirring. Cook and stir until the mixture thickens and becomes smooth.

Next, add in the heavy cream, grated cheddar cheese, and parmesan cheese. Stir well and cook until all the cheese has melted into a silky sauce. Once melted and smooth, remove from the heat and set aside.

Broccoli Potato Soup

While the cheddar sauce is resting, begin preparing the soup base. In a large pot, melt the butter and sauté the carrots and onion for about 3 minutes, until they begin to soften. Add in the garlic and cook for another minute, stirring frequently to prevent burning.

Pour in the water, then add the cubed potatoes, chicken stock powder, salt, and pepper. Stir everything to combine, then bring the mixture to a boil. Lower the heat and let it simmer for 10–15 minutes, or until the potatoes are tender.

Once the potatoes are nearly done, add the broccoli florets and dried thyme. Cook for another 5 minutes, just until the broccoli is tender but still vibrant.

Finally, pour the prepared cheddar mixture into the pot. Stir until everything is well combined and creamy. Remove from heat.

Ingredients

Cheddar Soup

  • 3 Butter
  • ⅓ cup Flour
  • 3 cup Milk
  • ½ cup Heavy Cream
  • 2 cup Grated Cheddar Cheese
  • ⅓ cup Grated Parmesan Cheese

Broccoli Potato Soup

  • 1 tbsp Butter
  • 2 cup Broccoli Florets
  • 3 medium Potato cubed
  • 2 medium Carrots cubed
  • 1 Onion sliced
  • 2 clove Garlic minced
  • 3 cup Water
  • 2 tsp Chicken Stock Powder
  • 1 tsp Salt
  • ½ tsp Pepper
  • ¼ tsp Dried Thyme

Instructions

Cheddar Soup

  1. Melt butter in a pan or saucepan over medium heat. Stir in flour and cook for about 1 minute.

  2. Pour in the milk while continuing to stir, cook and stirring constantly until the mixture is thicken.

  3. Add in heavy cream, cheddar cheese, and parmesan then stir and cook until the cheese has melted. Remove from the heat and set aside.

Broccoli Potato Soup

  1. In a pot, melt butter and sauté carrot and onion for 3 minutes. Add in garlic and sauté for 1 minute longer.

  2. Pour water then add potato, chicken stock powder, salt and paper. Stir to combine and boil for 10-15 minutes.

  3. After 15 minutes, add broccoli and dried thyme then cook 5 minutes longer.

  4. Pour the cheddar mixture into the pot and stir until well combined and remove from the heat.

  5. Serve warm and enjoy!
