One day, I watched the food vlogger eating a creamy dish at my lunch time. It was so mouthwatering. She used milk and cheese in her dish. It looked creamy and cheesy. Crazy for something cheesy and creamy, I decide to make a creamy and cheesy pasta for my dinner.
Coming home, I rush to the kitchen to see some ingredients to make pasta. Oh, I’m so lucky I get all ingredients I need. There are fusilli, parmesan cheese, chicken breast, and heavy cream. No doubt, I make chicken alfredo directly. I don’t need to take a long time, just take a 30-minutes to make this flavorful pasta. Then, you can enjoy the yummy pasta.

What is chicken alfredo fusilli pasta?
Chicken alfredo fusilli pasta is a type of pasta dish made with fusilli mixed with Parmesan cheese and butter. When cheese is melted, it emulsifies the liquid to form a smooth, thick layer over the pasta. The term is a synonym for pasta with butter and Parmesan cheese (Italian: pasta al burro e parmigiano), one of the oldest and easiest ways to prepare pasta. This dish was named by Alfredo Di Lelio Saya, a restaurateur who opened and controlled a restaurant in Rome, Italy, throughout the early to mid-20th century.
Why I use fusilli instead of fetucinne?
Oh, I’m really sorry to myself and you because I just found fusilli in my kitchen. If I had it, I would use it. The original recipe is using fettuccine. Yet, you can use other pasta like penne, fusilli, elbow, or bowtie.
A Love Story in Alfredo Pasta
In 1908, a man named Alfredo Di Lelio continued his mother Angelina’s Italian restaurant. This restaurant called Piazza has been open since 1892 and was forced to close in 1910. Alfredo then opened his own restaurant in 1914. This restaurant serves a variety of traditional Italian menus, namely pizza and pasta. At that time, Alfredo wanted to provide the best food for his wife who was pregnant with their first child. Unfortunately, his wife had no appetite at all, so she lost a lot of weight.
Alfredo then wanted to give him a simple but delicious, nutritious, and nutritious meal in one plate. He also makes fettucini pasta which is combined with cheese and butter. Fortunately Alfredo’s wife wanted to eat the food. Since his wife really liked his food, Alfredo made it his restaurant menu. In 1927, Mary Pickford and Dounglas Fairbanks, a Hollywood actor couple, came to Alfredo’s restaurant on their honeymoon in Italy. The actor couple loved the unique pasta Alfredo made, so they named the food with the name Alfredo sauce fettucini.
Until now the restaurant Alfredo is still standing in Rome, Italy. Alfredo’s descendants continued his restaurant from generation to generation by Alfredo’s descendants. Although many Alfredo sauces have been innovated with the addition of other ingredients, the Alfredo restaurant still maintains the recipe from their ancestors.

Chicken Alfredo Fusili Pasta
- Fusilli Pasta – I use what store in the kitchen left. You can use other pasta you like.
- Heavy Cream – It is to make creamy pasta. You can adjust it with your creamy preference.
- Parmesan – It is a must for a creamy dish to use cheese. You can add ricotta cheese too if you like it.
- Chicken Breasts – Not only something creamy, I add a savory and crispy kick to the pasta. It enhance the texture and the taste.
- Butter – It gives the savory taste to the pasta. Then, if you want to control the sodium content, you can use unsalted butter.
- Olive Oil – To sautee the garlic and chicken.
- Garlic – it is to strenghten the aromatic of the pasta.
- Seasoning – I use garlic powder, chilli powder, black pepper, sea salt, and sugar to taste.
How to Make Chicken Alfredo Fussili Pasta
Cook fusilli pasta with salt according to direction. Set aside.
Slice chicken breasts from 1 chicken into 4 parts, cut in half and then cut lengthwise.
Coat the chicken breasts with olive oil, garlic powder, chilli powder, salt and black pepper.
In a pan fry, fry the chicken until golden and nice over medium heat.
After the chicken breasts are cooked, turn off the heat and transfer it to a plate.
In the same pan fry, heat the butter over medium heat.
Fry the chopped garlic until golden.
After the garlic turn golden, add heavy cream, stir until mix well.
After you mix it, you can give the seasoning. Add salt, sugar, black pepper and parmesan then mix well until parmesan melted.
Next, Add cooked fusilli, then mix the fusilli with sauce. After combined, turn off the heat.
Slice the chicken breasts then add them into the fusilli alfredo.
Sprinkle it with parsley.
Chicken fusilli alfredo is ready to serve.
Recipe Notes
- You can substitute chicken breast with meat of your choice such as chicken thigh, turkey, ground beef, sirloin steak cuts, etc.
- If you want the sauce to be a little lighter, you can substitute heavy cream with half and half.
- Feel free to use your favorite short pasta.
- Cook pasta al dente, it’ll cook further in the sauce.
- You can add a few tsp of Italian seasoning. Feel free to adjust and to add more seasoning.
- You can use instant alfredo sauce if you don’t have time to make the sauce.
