Making dinner food with chicken recipe never goes wrong. Golden chicken breast combines with spinach and sun-dried tomatoes, seasoned with rich creamy parmesan sauce. Hmm, Yum!
Sun-dried tomatoes are ripe tomatoes that lose most of their water content after spending a majority of their drying time in the sun.
For this recipe, I have a solution for you who can’t get sunlight to dry the tomatoes. It’s the oven!
The tip is using the lowest temperature of your oven and keep an eye on it until the moisture reduced by 2/3.
What’s in chicken with sun-dried tomatoes parmesan sauce?
These ingredients are basic. That are usually store in your pantry or refrigerator. You don’t need expensive ingredients to make the luxury and delicious food!
- Chicken breasts: You need to slice the chicken thinly. The chicken will cook evenly and quickly.
- Parmesan cheese: Use freshly grated if possible for the best consistency in your sauce. Parmesan in the shaker can be substituted but fresh is best in this recipe.
- Flour: Use this ingredient to thicken the sauce.
- Heavy cream: The slightly sweet and creamy base of the sauce.
- Seasoning: You need chili powder, black pepper, salt.
- Sun-dried tomatoes: you can find this in grocery stores’ produce area near the fresh tomatoes. Yet, if you didn’t find it, you can follow my tips in this recipe.
- Spinach: You need to chop it. Then, add to the cream sauce.
- Garlic: This is to add a rich flavor to the sauce.
How to make chicken with sun dried tomatoes parmesan sauce:
Mix all the dry seasoning for chicken breasts until evenly distributed. Coat the chicken breasts with the dry seasoning mix.
In a pan fry, heat the cooking oil over medium heat. Fry the chicken until golden and nice. After the chicken breasts are cooked, turn off the heat and set aside.
Stir fry garlic using oil that is used to fry chicken breasts in medium heat until golden. Add sun-dried tomatoes and heavy cream.
Then add parmesan cheese, chili powder, salt, and black pepper. Stir until evenly distributed. Add spinach then stir gently until the spinach wilts.
Add the cooked chicken breast, then mix the chicken with sauce.
Turn off the heat then place the chicken with sun-dried tomatoes parmesan sauce into a plate.

Recipe Notes
- You can change the chicken for salmon or shrimp. The sweet from the garlic suit with that meats.
- To ensure your chicken is cooked throughout, look for the juices to run clear. Also, keep in mind chicken must be cooked to an internal temperature of 165 degrees.
- Be sure to use freshly grated parmesan cheese. It makes the sauce is creamy and smooth with the texture of cheese.
- Make sure your chicken is at room temperature before cooking. It will cook more evenly than if it is still cold.
- Using at least 2-4 cloves of garlic to make it super flavorful.
- You can substitute the heavy cream with chicken broth or water. I
- choose heavy cream because it makes the thickest richest sauce.
- I add a cup of spinach to add color and texture to the sauce.

- 41 g Sun dried tomatoes
- ¼ cup Parmesan cheese
- ½ cup Heavy cream
- 1 cup Spinach
- 3 cloves Garlic
- ¾ tsp Chili powder
- ¾ tsp Black pepper
- ¾ tsp Salt
