Ingredients of Cinnamon Sugar Pumpkin Donuts
Donuts

- Bread Flour; I use bread flour for its higher protein content, which gives the donuts a slightly denser, chewier texture. This is ideal for donuts as it allows them to maintain their shape while still being soft and airy inside. The added gluten from bread flour provides that ideal chewy bite, perfect for donuts. Gives the donuts structure and chewiness while keeping them fluffy.
- Active Dry Yeast; the key ingredient that helps the dough rise and become fluffy
- Milk Powder; to give the donuts a richer, fuller flavor. It also contributes to the texture by making the donut dough tender and soft. The milk powder provides a subtle creaminess without the extra moisture of liquid milk, which could affect the dough consistency.
- Sugar; more than just sweeten the donuts—it helps with the fermentation process by feeding the yeast, allowing it to work faster and better.

- Salt; It balances out the sweetness of the sugar and enhances the overall flavor of the donuts.
- Steamed Pumpkin; : Not to be confused with pumpkin pie filling, pumpkin puree is just pure, pureed pumpkin. You can usually find it in the baking aisle near the premade pie fillings. The natural sweetness of pumpkin pairs perfectly with the cinnamon sugar coating.
- Egg Yolk; add richness and flavor to the donut dough.
- Cold Milk; Cold milk also contributes to the texture of the donuts, ensuring they are light and fluffy rather than dense.
- Unsalted Butter: You’re going to use butter both in the donut base and to coat the donuts after baking so the cinnamon sugar sticks. I call for unsalted butter in the recipe, but if all you have is salted, it will work fine. Just cut the added salt in the recipe by half. Makes the dough tender and adds buttery flavor.

How to Make Cinnamon Sugar Pumpkin Donuts
First, combine the bread flour, yeast, milk powder, sugar, and salt in a mixing bowl. Stir well until everything is evenly mixed.

Next, add the steamed pumpkin, egg yolk, and milk. Mix with a hand mixer until all the ingredients come together into a smooth dough.

Now, add the butter and knead on high speed for about 12 minutes, or until the dough is smooth and elastic. Round the dough into a ball and place it back in the bowl. Cover the bowl with plastic wrap and let it rest for about 30 minutes, or until the dough has doubled in size.
Once risen, divide the dough into 16 equal pieces. Shape each piece into a smooth ball with your hands, then place them on parchment paper. Cover with plastic wrap or a damp cloth to prevent drying. Let them proof for 10 minutes.

After 10 minutes, lightly sprinkle flour on the dough balls. Flatten each one gently with your hand and make a hole in the center. Be sure the hole is wide enough so it doesn’t close up during frying. Place them back on parchment paper and proof again for about 40 minutes, until puffy. Heat oil in a pan over low heat. Once the oil is hot, carefully fry the donuts for about 3 minutes on each side, or until golden brown.


Remove from the oil and place on a cooling rack to drain excess oil.
Meanwhile, prepare the coating by mixing sugar and cinnamon powder in a medium bowl. While the donuts are still warm, roll them in the mixture until fully coated.

Cinnamon Sugar Pumpkin Donuts
Ingredients
Donuts
- 280 g Bread Flour
- 4 g Active Dry Yeast
- 15 g Milk Powder
- 35 g Sugar
- 3 g Salt
- 100 g Steamed Pumpkin
- 2 Egg Yolk
- ⅓ cup Cold Milk
- 30 g Unsalted Butter
Cinnamon Sugar Coating
- ½ cup Coaster Sugar
- ½ tbsp Cinnamon Powder
Instructions

Mix well bread flour, yeast, milk powder, sugar and salt in a mixing bowl.

Add steamed pumpkin, egg yolk and milk then mix with a hand mixer until well combined.

Add butter and knead on high speed until the dough elastic or for about 12 minutes.

Round the dough and cover the bowl with plastic wrap then allow the dough to rest and rise for 30 minutes or until doubled in size.

After 30 minutes, divide the dough into 16 and make a smooth ball shape with your hand then put in on parchment paper and cover it with plastic wrap or wet cloth so the dough won’t dry out. Proof for 10 minutes.

After 10 minutes, sprinkle the dough with flour then flatten with your hand and make a hole in the centre. Make sure the hole is not too small so it won’t be closed when you fry the donut. Put it on parchment paper and proof again for 40 minutes.

In a pan, heat cooking oil over low heat. Once the oil is hot, fry the donut for about 3 minutes each side or until both sides golden brown. Remove from the heat and rest them on the cooling rack.

For the cinnamon sugar coating, mix sugar and cinnamon powder together in a medium sized bowl and roll the donuts in a cinnamon sugar mixture until coated.
