Do you have some leftover veggies in the fridge and have no idea what to do? Let’s mix it into cowboy stew. Cowboy stew has the same name as ranch stew. They are literally so a piece of cake. You don’t really have to be skillful to cook this. In Texas, it’s original producer cowboy stew made, Some versions are thickened by sprinkling in a little cornmeal and served with cornbread. The reason it is called stew was coming from when you mix it all together and the cumin plays a great role too.

As I read on the internet, Wikipedia said that Stews have been made since ancient times. The first time of stew was found in Japan, dating to the Jōmon period. Additionally, Herodotus said cowboy stew as “put the flesh into an animal’s paunch, mix water with it, and boil it like that over the bone fire.
The stew consisted of cubed beef chunks coated in flour, paprika, chili powder, and salt, then seared until light brown. Cooked in a cast-iron pot and filled with just enough water to cover along with onion, herbs, spices, salt, pepper to taste, potatoes, and other root vegetables that might have been had on hand along with a grain such as barley or rice; then boiled and simmered to make a thick broth. or in simpler meaning is you pour everything you have in the fridge then add cumin. Voila, here it is what cowboy stew becomes!
I have to say that of all the “cowboy” themed dishes, Packed with beans, potatoes, sweet corn, plenty of aromatics, and kinds of meat, it sticks to your ribs like chili, but has even more layers of flavor. It’s a lot of flavor in one pot.

The Ingredients of Cowboy Stew
The ingredients I made here are free to customize. You can make it with fewer or more ingredients. Just do not forget the main ingredient, beef, sausage, veggies some spices, and herbs. well, the original Cowboy stew actually uses bacon, since I do not consume pork, so I only use beef. You can change the meat with chicken too. it turns great!
The main ingredients, there are Ground Beef, Sausage, vegetables. Here I use Potatoes cubed Green Chili Sweet Corn Diced Tomato Baked Beans drained Frozen Mixed Vegetables. For some spices, I use Garlic Onion Chili Powder.
Beef Broth, All-Purpose Flour, Granulated Sugar, Ground Cumin, Salt, Black Pepper for seasoning and adding rich texture.
How to make Cowboy Stew
first thing first, In a pan sautée onion until fragrant over medium-high heat. Add ground beef, sausages, garlic, all-purpose flour, salt, and black pepper. Cook until the ground beef turned brown. after that, Turn off heat, then transfer to a large pot.
next, Turn on the heat over medium heat. Add in potatoes, green chili, tomatoes, baked beans, frozen mixed vegetables, and beef broth.
Then, you only need to mix everything until well combined. Do not forget to add cumin, chili powder, salt, and black pepper. Stir until well combined.
Turn the heat to low heat, then bring the cowboy stew to boil and simmer for 1½ hours. Scrap the bottom of the pot once every 20 minutes to make sure nothing gets burnt.
The last step, After done cooking, turn off the heat, and cowboy stew is ready to serve.

- 8 oz Sausage
- 3 clove Garlic
- ½ Onion
- 2 medium Potatoes cubed
- 2 Green Chili
- 2 tbsp All-Purpose Flour
- 5 oz Sweet Corn
- ½ can Diced Tomato
- 1 can Baked Beans drained
- 1 tsp Chili Powder
- 5 oz Frozen Mixed Vegetables
- 2 cup Beef Broth
- 1 tsp Granulated Sugar
- 1 tsp Ground Cumin
- 1 tsp Salt
- 1 tsp Black Pepper
Instructions
