Ingredients of Egg Salad

- Hard Boiled Egg; The base of egg salad that provides protein. I use 6 eggs to serve. You can scale the recipe up or down to make more or fewer servings. The eggs will be boiled, peeled, and chopped.
- Mayonnaise; My favorite mayo of the moment because it makes everything smooth and also adds creaminess. If you’re not a fan of mayo, you can also use plain Greek yogurt, sour cream, or hummus.
- Dijon Mustard; I usually use smooth Dijon mustard, but grainy mustard or even yellow mustard works well too if that’s your preference. Dijon mustard adds a tangy flavor and a bit of sharpness to the egg salad. It helps balance the richness of the mayonnaise and adds depth to the flavor profile.
- Green Onion; You can use red onion too, since red onion smells just too distinct for me so I use green onion to enhance the overall texture and appearance.
- Celery; Finely diced adds excellent flavor as well. and finely chopped celery give this dish a nice crunch. The taste is also slightly bitter in contrast to the creamy components.
- Salt and Black pepper; Don’t be tempted to go overboard on the seasonings or they will overpower the dressing. Salt and black pepper just perfectly balance the overall flavor profile of the egg salad.
Let’s Make Egg Salad
This egg salad recipe is simple! Begin by cooking the hard-boiled eggs, then peel and chop them.
Then, separate the egg yolks from the egg whites. Place the yolks in a bowl, and then add the mayonnaise, Dijon mustard, salt, and black pepper.

Using a fork, mash the ingredients together until the yolks are smooth and well combined. This step ensures that the flavors meld together harmoniously.

Next, it’s time to prepare the egg whites. Chop them into small pieces and transfer them to the yolk mixture.
Add the chopped green onions and celery to the bowl. These fresh ingredients will provide texture and a burst of flavor to the egg salad.

Gently stir everything together until the ingredients are evenly distributed. Be careful not to overmix, as you want to maintain some texture in the salad.
Once mixed, your egg salad is ready to be served. Pair it with toast, bread, or crackers for a satisfying meal or snack.
Now, sit back, relax, and enjoy your delicious homemade egg salad. It’s a simple yet flavorful dish that’s perfect for any occasion.
Serving Suggestion and Storage Tips

Here are some serving suggestions to enjoy egg salad;
- Dig in straight from the bowl. I often indulge in it right from the bowl with a fork because it’s so delicious!
- Pile it onto bread. Transform your egg salad into an open-faced sandwich, whether on gluten-free toast or my homemade falafel flatbread, topped off with a sprinkle of fresh microgreens.
- Roll it up. Create flavorful wraps by stacking slices of cucumber, bell pepper, and assorted veggies inside tortillas, butter leaf lettuce leaves, or collard greens. Then roll them up and enjoy!
Storage Tips

For the freshest egg salad, follow these storage tips:
- Preserve it in an airtight container. If you’re preparing egg salad sandwiches, refrain from assembling them too far ahead of time. Assembly too early can lead to sogginess!
- Maintain it in the refrigerator. Extended exposure to room temperature, exceeding 2 hours, can result in spoilage.
- Season to preference after chilling. I frequently discover that this salad benefits from an additional dash of salt or a squeeze of lemon after refrigeration. Feel free to taste-test yours post-chilling and enhance the flavors accordingly!
