Thinking aboout my trip to Singapore 2 years ago.
The quote on the internet posted on Instagram and Pinterest said that the new year is a new journey. A new year to accept and learn from our mistakes last year. Then, we learn to bury them deep to open a new page in the new year.
My trip in 2018, took me to Singapore. I don’t know why I was so eager to spend the new year abroad. Spending and scheduling my time on purpose so that I could take a vacation abroad. Therefore, Singapore is my choice to go. I went to Singapore by myself. At that time, I did not use an airplane. I want to meet different people and circumstances during my trip from Bandung to Singapore.
That trip was so interesting. Some people helped me to carry my bag. I was happy that it was still a helpful person in this world. In a way the trip, I enjoyed talking with new people.
Interesting moment to get life value from the fruit seller.
Another interesting moment was my meeting with Mr. Soleh. He sold fresh-cut fruit to passengers. My meeting happened when I crossed from Indonesia to Singapore by cruise ship.
“What do you need to do in Singapore?” asked Mr. Soleh starting our conversation by sitting in front of me.
“Oh. just having a fun holiday, Mr.”
“Wow, it’s good to be able to take a vacation in Singapore”
“You’re right. Can’t wait to go shopping! Are you going to take a holiday also?” I said.
“Oh no, miss. Here, I am a fruit seller. I sell fresh-cut fruit on the ship. Let’s see” – the fruit that he sold still quite a lot and fresh too.
“Wow, but you can play and work at the same time because you can go Singapore and come back to Indonesia directly Mr.”
“Yeah. But, what’s the point of playing and working balance when our minds are left at Mbak’s house.”
“What do you mean, Mr?”
“My wife is sick, Miss. So, I also sell fruit on the ship to cover the medical expenses of Mbak’s wife.”
“I’m sorry to hear that. What’s wrong, Mr, if I may ask?”
For a moment Mr. Soleh took a deep breath before he told his heavy burden.
“My wife has a brain tumor, Ms. We were alone. Now he is being cared for at home.”
“What about your son, sir?”
“My son is married, Miss. His job is odd jobs. “
“Have your wife tried treatment at the hospital?”
“Yes, but, for serious treatment, I don’t have money. Ms. I don’t have Social Health Insurance Administration Body”
A 2-hour journey on the sea that surprised me so much, an old man still wanted to sell back and forth on the ship to pay for his wife’s sick medicine fees. The sea breeze seemed to be a silent listener too, making the skin goosebumps hearing Mr. Soleh’s story. His love for his wife is so sincere, without complaining his wife is a burden.
Some life values from a mango.

“Sometimes we eat sour fruit on one side, but on the other hand we also eat sweet fruit…”

I didn’t feel my tears drop while listening to Mr. Soleh’s words. I didn’t expect the life lessons I got from a traveling fruit seller while sailing to Singapore. After that, I immediately bought Pak Soleh’s cut fruit, especially the mangoes. The fruit I bought was nothing compared to the very expensive life lessons in motivation class.
I decide to make Mango Crumbles in Singapore. Should I make it again?
After a day in Singapore, I bought mangoes from the market around the Chinatown area again. It was because I remember Mr. Soleh with his mango fruit. I tried to find something easy with very minimal ingredients and effort. So, I decided to make Mango Crumble. The ingredients are also few, I use some ingredients in the apartment kitchen. The most important ingredients are mango, lemon, and flour.
Luckily the apartment where I stayed had a small refrigerator and cooking utensils in the mini kitchen with some left ingredients. Mr. Soleh is right, I can decide what taste of our tongue taste when I eat it sour and sweet at the same time. It depends on me who wants to remember which taste I like. That doesn’t mean I shouldn’t forget other feelings, instead, other flavors are a reminder that I’ve been through bad things in our lives.
Likewise, I decided to remember the sweet memories of 2018 and move forward like a mango tree that has been sliced but grows even better in the next year and beyond.
What do you need to make Mango Crumbles?
Mango Filling
- Mango – you can use fresh mangoes or frozen mangoes. Here, I use ripe mango because I still have mango left from the no-churn mango sorbet recipe.
- Granulated Sugar – It is to balance the tartness of the lemon.
- Lemon – I use lemon zest from ½ lemon and lemon juice. It is to give a richer taste to the mango.
Crumbles Dough
- Flour – I use all-purpose flour. You can use other flour like almond flour and a bit of tapioca flour.
- Cold Butter – Cut them in dice. It is to make the dough stick together and add a savory taste.
- Vanilla Extract – enhance the tasty and sweet aroma.
- Water – liquid needs is to mix the ingredients.
- Seasonings – Use sea salt and granulated sugar.
- Toppings – I use vanilla ice cream optional.
How to Make
Mango Crumbles
Mango Filling
In a bowl, combine diced mango, granulated sugar, lemon zest, and lemon juice. Set aside.
Crumbles
Next, in a food processor combine flour, cold butter, granulated sugar, vanilla extract, and sea salt. Pulse several times to mix. Do not overmix.
After that, add water and pulse again several times to mix.
You can know the mixture is ready when you pinch some of the crumbly dough. If the crumble holds together on your fingers, it means ready.
Mango Crumbles
Preheat oven to 350° F (175° C).
To assemble, add a layer of ½ part of a crumbles dough to a 7.5×9.5×2-inch glass rectangular dinnerware.
Then, gently press the crumbles dough down so that it lines the bottom of the dinnerware.
Next, fill the dinnerware with mango filling.
Sprinkle the rest of the crumbles dough on top of the mango filling.
Then, bake for 45-50 minutes.
When done baking, cool the mango crumble at room temperature.
Lastly, for some additional taste, serve with vanilla ice cream. Enjoy the Mango Crumbles!
Recipe Notes
- For mango preference, you can use ripe or almost ripe mango. I suggest using mangoes that are in your kitchen. Or, you can buy them in some stores near you.
- If you use frozen mango, I suggest to aside the mango. Then, you wait for them until it isn’t frozen again. Then, dry it. If you process it right away, the water contained in the mango will make the dough mushy and runny.
- Choose flour that you have in your kitchen. If you don’t have all-purpose flour or cornflour, almond flour and a little tapioca flour can help.
- I used granulated sugar, but you can use any sugar suitable for filling and topping.
- The topping here is very simple. But, for additional topping, you can add chopped nuts such as pecans, walnuts, almonds, cashews, etc. Granola and oats also work to mix to the batter or as a topping.
- If you eat it straight after it comes out of the oven, it probably won’t be tasty. This is a dessert that is better cold.
How to choose the right and ripe mango?
When we buy or pick mangoes directly from the tree, it is not exactly ripe, so it doesn’t taste sweet and juicy. If you are not lucky, many mangoes taste sour, even though they have quite a soft texture. This is because the farmer picks the mango at the wrong time.
Ensuring a perfectly ripe mango takes some effort. So, here are four ways to tell if a mango is ripe and sweet.
Firstly, ripe mango is soft and has a smoother texture. When picking them from the tree, avoid picking mangoes that are too tough or have tough skin.
Secondly, when buying mangoes, don’t let the color fool you. The good color of mango usually is a bright mango color. It can be bright yellow, yellow, or red. To be sure, the fruit must be soft and the color must be bright.
Third, smell the mango near the stem. If they have a strong, sweet, fragrant, and fruity aroma, it means they are ripe. Ripe mangoes will always smell good and sweet.
Fourth, the shape of the mango must be plump and round. Do not choose a mango that is flat or thin in texture.
