The Origin Story of Nashville Hot Chicken Wings

As the southern legend goes The origin of Nashville hot chicken can be traced back to the 1930s in Nashville, Tennessee. According to legend, a well-known womanizer named Thornton Prince, who was “tall, handsome, and good-looking,” came home late one night after a night out with friends and wanted a late-night snack. He found some chicken in the refrigerator served by his girlfriend. and decided to fry it up. However, instead of making his usual fried chicken, he decided to add some spices to it to give it some extra flavor.
The chicken turned out to be very spicy, but Prince loved it so much that he began experimenting with different spice blends to perfect his recipe. He eventually opened up a restaurant called Prince’s Hot Chicken Shack in Nashville, where he sold his spicy fried chicken to locals and tourists alike, and it is considered to be the birthplace of Nashville hot chicken. Despite its widespread popularity, however, Nashville hot chicken remains a beloved tradition in Nashville and a symbol of Southern culinary heritage.
It is funny, from the accident into a fortunate event, thanks to him today we can consume this lovely spicy Nashville hot chicken wings! Let’s kick into the recipe.
Ingredients of Nashville Hot Chicken Wings
Chicken Marinate
- Chicken Wings– I’m using chicken wing portions (where the flat and drummette are separated), but you could use whole wings if you prefer.
- Cayenne– The main source of spice in these wings – just like in traditional Nashville Hot Chicken. If spice isn’t your thing, feel free to reduce the amount as much as needed.
- Garlic Powder, Salt, White Pepper, and Hot Sauce– to add more even flavor to chicken wings
- Milk
Fried Chicken Breading Mixture
It will help coat the chicken to create a super crunchy, well-seasoned crust for these wings, they are;
- All-purpose Flour
- Cornstarch
- Creole Seasoning– I will make this recipe so you can save this multifunction seasoning for every food!
Spicy Oil
- Reserved Fry Oil– Not only do you use oil to fry the chicken, but you also use the oil that you fry the chicken in as part of the hot sauce that you baste the chicken.
- Ground Cayenne Pepper, Smoked Paprika, Chili Powder, Brown Sugar, Garlic Powder and Salt– for mixing the last seasoning.
Instructions to Make Nashville Hot Chicken Wings
To start, make the preparation first. In a large mixing bowl, combine all the marinated ingredients which are Cayenne, Garlic Powder, salt, white pepper, hot sauce, and milk with chicken wings. Refrigerate and marinate for at least 6 hours.
After 6 hours, or more heat vegetable oil until it’s enough to deep fry the chicken wings.
Next, let’s Prepare the breading mixture by combining all the fried chicken breading mixture in a mixing bowl. Mix thoroughly.
And then, Remove the chicken wing from the marinated mixture, one at a time. Shake gently to remove the excess, then place it in a breading mixture. Coat thoroughly.
Carefully fry 1- 5 chicken wing pieces at a time. Cook until the wings turn golden brown. you can do the double frying method. here I use it once only.
After frying, remove the chicken wings from the pan and drain them on paper towels.
Continue frying the rest of the chicken wings.
Steps you need to make spicy oil for coating.
Combine ground cayenne pepper, smoked paprika, chili powder, brown sugar, garlic powder, and salt in a bowl then carefully add the hot oil that is used to fry chicken wings. Mix thoroughly.
With a silicon brush, brush spicy oil to the chicken wings one by one on all sides, then place them onto a plate.
Finally, serve immediately. Enjoy! it is best served while hot and eaten together with family. But not to worry. you can eat alone while watching TV too!
Recipe Notes;
- If you want a spicier version of this recipe, add more cayenne pepper to the flour mixture or the hot sauce. If you prefer a milder taste, reduce the amount of cayenne pepper in the recipe.
- For a crispier coating, you can double-dip the chicken wings in the flour mixture before frying them.
- You can also grill or air fry the chicken wings instead of frying them if you prefer a healthier version of this dish.
- You can use either chicken wings or drumettes for this recipe. If you prefer a spicier dish, you can leave the chicken wings whole with the drumette attached
- Make sure to pat the chicken wings dry with paper towels before coating them in the flour mixture. This will help the coating adhere better to the chicken.
