Sugar where are you? I lack of sugar
After a long time, I didn’t find anything sweet because I was reducing sugar for the past two weeks, I took the initiative to make a candy bar soon. Yes, at least a candy bar can cure my hunger for sugar.
As a mother who has a toddler, sometimes I don’t have much time to make food or drink. 24 hours a day is not enough to divide the time between taking care of the household and work.
Moreover, my son is a child who is very close to me. I just go away for a while, he will immediately look for me and ask me to pay attention to him. Yes, it’s normal, small children are usually possessive. Haha.
I don’t have much time, I usually make easy, simple, and quick snacks or desserts for sweet tooth intake.
Like I said, my time to cook is very limited so I make food when my son is fast asleep. Maybe only a few hours, but it means a lot to me. These few hours are very narrow, I usually make something that can please me like a sweet snack or dessert.
I’m used to making my own snacks at home, I always use food ingredients at home. Those of you who often read on much butter must know, I am the person who makes the ingredients in the kitchen into a food or drink. Now, I saw that there were some piles of cashews left, so I decided to process them.
I think I’m about to turn these cashews into something quick and sweet. I thought about making candy. Candy containing caramelized sugar. That seems like a good mix of sweets. The sweetness of the caramel and the saltiness of the cashews will make a unique and delicious combination. Immediately I tried it and it really tastes good with a texture that makes it comfortable. You should try it if you have cashew nuts in your household. It’s really really easy because there’s no baking!
The Ingredients of
No-Bake Caramel Cashew Bar
The caramel cashew bar has a effortless ingredients if you have cashew in stock. Yet, it will provide a delicious combination of the crust, caramel sauce, and topping. These topping ingredients is adjustable based on your preference. Yet, I think for caramel sauce and no-bake crust, these ingredients are the best so far. So, for the ingredients in the recipe I divide to three part; caramel sauce, no-bake crust, and toppings.
For caramel sauce, I use granulated sugar, heavy cream, butter, and sea salt. These ingredients will make the caramel sauce has a balance sweetness. You can use instant caramel sauce if you don’t want to make caramel sauce by yourself.
For no-bake crust, prepare marie biscuits, melted butter, and a pinch of salt. Even it seems simple ingredients, this crush recipe won’t make you disappoint. If you don’t have marie biscuit you can use other biscuit. Yet, it will change the texture and the taste of this recipe.
For toppings, we need roasted cashew, dark chocolate, and flake salt. Feel free to add or change the cashew with some nuts, seeds, or dried fruits if you want it. Dark chocolate here doesn’t coat the bar, it mix with the cashew bar batter. Also, flake salt is optional. You can omit it or change with salt preference.
How to Make
No-Bake Caramel Cashew Bar
Caramel Sauce
Heat granulated sugar in high heat. Stirring constantly until melt into a thick brown. Be careful not to burn.
Once sugar is completely melted, add the butter and stir constantly until melted and combined.
After the butter and caramelized sugar have combined, cook for 1 minute without stirring.
Add heavy cream and stir slowly until combined. Then boil for 1 minute without stirring.
Turn off heat then add the salt. Cool the caramel sauce down.
No-Bake Crust
Finely crush Marie biscuits in a food processor or crush with a rolling pin in a ziplock bag. Use 2 cups of crushed Marie biscuits for this recipe.
In a large bowl, stir Marie biscuit crumbs, melted butter, and salt together.
Press mixture into the bottom and up the sides of a 9” x 9” baking tray. Press hard to compact.
Assembly
Add roasted cashew to the salted caramel sauce and stir until mix well.
Place the cashew and caramel on top of the crust.
Place it on the refrigerator to set the caramel cashew bar for about 1-2 hour.
Remove the caramel cashew bar from the baking tray.
Melt dark chocolate in a double boiler. Place it in a piping bag.
Drizzle melted dark chocolate on top of the caramel cashew bars.
With a knife, cut the caramel cashew bars into 16 square shape bars. (4×4)

Recipe Notes
- You may want use other nuts for this recipe, feel free to use any nuts, fruits, seeds or others filling you like. Yet, it will make the taste different.
- I don’t recommend to set aside the caramel in a few hours because it makes the caramel harder.
- If still caramel left, use for other candy variation like with some fruits.
- You can add more chocolate to coat the bar.
- Feel free to use instant caramel to this recipe to make it easier, but homemade recipe is the best.
- Best eating after 5 minutes out of freezer.
To store this, you can store to the the container directly after it freeze. Make sure to make it still cold because it will be sticky if it is too long at the room temperature.
To freeze it, store it into the sealed container. It will be last up to 2-3 months.
