Cookies and cream banoffee parfait is a modification of the famous banoffee pie with cookies and cream as the crumb base. The cookies and cream pastry base, banana, whipped cream and dulce de leche make a perfect combination!
Banoffee pie is an English dessert combining from the words banana and toffee. Banoffee made from crumbles biscuits for pastry base, banana, whipped cream, and toffee (made from boiled condensed milk or dulce de leche).
The famous banoffee pie is also popular in Indonesia. The main ingredients are liked by many people. There are this one of my favorite Indonesian snacks where they caramelized the banana named sale pisang ambon basah. And it kind of reminds me of that snack when I eat this cookie and cream banoffee parfait. The combination of banana and toffee is soooo good.
For this cookies and cream banoffee parfait recipe, I make them in small portions so you can serve it to your guests while entertaining. Or you can save it in the refrigerator for another dessert time.
Despite making dulce de leche from scratch, the other ingredients are easy to be made and assembled. It will be a delightful dessert or snack for you and your loved ones.
How to make Cookies and Cream Banoffee Parfait:
To make dulce the leche, fill a large saucepan with sweetened condensed milk and water until the water is 2,5cm/1 inch above the can surface. Turn on the heat and boil.
After the water boiled, simmer for two hours and a half over low heat. Then turn off the heat and let cool the can in the pot. After cool completely for a few hours, keep in the refrigerator.
Melt the salted butter. Set aside.
Crush the cookies and cream sandwiches using a food processor. If you want to make it less sweet, only add half of the cream of the sandwiches.
Once the cookies and cream sandwiches crushed, turn off the food processor then pour the melted butter. Turn on the food processor again to mix the crushed cookies and cream sandwiches and melted butter. Move it to a bowl. Set aside.
Whisk heavy cream and powdered sugar in a bowl until soft peak form. Let cool in a refrigerator.
Cut the bananas in ¼ of an inch. Set aside.
In a 300ml cup, put 1 tbsp the cookies and cream crumbs, 4-5 cut bananas, swirl 1/2 tbsp dulce the leche, and 2 tbsp whipping cream, twice following with the order. Repeat the step to the other 4 cups.
Lastly, pour shaved milk chocolate on top.

- 1 pack Cookies and Cream Sandwiches 137g
- 2 cup Heavy cream
- 2 tbsp Powdered Sugar
- Milk Chocolate shaved for garnish

Recipe Notes
- You can make ahead the dulce de leche 1 day or several days before.
- You can cut the sweetness by reducing cream of Oreos by half.
- Keep the Oreo banoffee parfait cool in a refrigerator.
