Have you ever seen pictures of colorful stir-fried noodles all over Instagram? That’s Pad Thai, and it’s basically the rockstar of Thai food! This dish is everywhere you go in Thailand, from fancy restaurants to street carts where they whip it up in a flash. The dish typically consists of rice noodles, stir-fried with eggs, tofu or meat (often shrimp), and a mixture of dried shrimp, garlic, chili peppers, and tamarind juice. Peanuts, bean sprouts, and scallions are often added as garnishes.
What Is Pad Thai?

Speaking of the devil, originating from Thailand, Pad thai (also called pad thai), is a popular street food dish of stir-fried flat rice noodles. Pad Thai directly translates to “stir-fry noodles.” It’s made with wide rice noodles and a deliciously tangy-salty-sweet sauce that is tossed in a wok with aromatics and ingredients like shrimp, tofu, beaten eggs, and bean sprouts.
Don’t be scared of the list of ingredients. Some may be hard to find like the dried shrimp or the Chinese chives, but I have provided substitutes for them all. However, if you have a good Asian market nearby, I really recommend going there and buying all these ingredients.

While Pad Thai is now considered Thailand’s national dish, its origins are relatively recent. It is believed that the dish was created during the reign of Field Marshal Plaek Phibunsongkhram in the 1930s as a way to promote Thai identity and unity. Finally, the government encouraged the consumption of rice noodles as a staple food, and Pad Thai emerged as a popular and nutritious option.
So, next time you’re craving some delicious Thai food, give this shrimp Pad Thai a try! It’s guaranteed to satisfy your taste buds!
Ingredients of Shrimp Pad Thai

- Rice noodles; I usually use Flat thin rice noodles. I recommend “Thai-style” rice noodles, and you can find them in the Asian foods section of the grocery store.
- Shrimp, cleaned and deveined; peeled and deveined. I recommend purchasing the easy-peel kind already.
- Oil; like avocado oil, sunflower oil, grapeseed oil, peanut oil, vegetable oil, or canola oil with a high smoke point.
- Onion; The base for the flavor, sliced onions add sweetness and texture.
- Garlic, minced; as aromatic Garlic is essential to the base of this dish.
- Egg, beaten; We’re going to create almost a scramble with these eggs in our noodles.
- Chili flakes; This is optional, if you want spicy you can add these chili flakes
- Bean sprouts; or substitute with soybean sprouts if you can’t find the mung bean version. I love to add fresh sprouts as a nice crunch and juicy acidity to this dish.
- Green onion: Chopped green onions provide a fresh, oniony taste.
- Salt and pepper: Basic seasonings to balance the flavors.
Sauce

- Fish sauce; A common ingredient in many Asian dishes, fermented fish oils and salt lend an intense umami flavor and give Pad Thai its distinctive salty and umami flavor.
- White vinegar; adds brightness and provides a tangy and acidic balance.
- Brown sugar; Will help us develop a complex flavor profile for this sauce and round out our flavor profile. or sub with brown sugar
- Oyster sauce; This gives a delicious savory flavor.
- Soy sauce; to add deep flavor, it adds a nice saltiness and umami flavor and balances the sweetness.
- Sriracha; This adds some heat to the dish. You can use more or less, depending on your heat preference.
- Water; To adjust the consistency of our sauce.
- Sesame oil; adds a nutty aroma and flavor.
- Tamarind water; this usually comes in brown pulp block with tamarind seeds throughout. You’ll need to cut off a small piece of it to soak it in the hot boiling water to create the tamarind extract or tamarind concentrate.
- Toppings; I use Lime wedges; Cut into wedges and squeeze over the finished dish. and Cilantro; Fresh and chopped up well.
How to Make Shrimp Pad Thai

First, cook the rice noodles according to the package directions. Then, to prevent sticking, immediately rinse the cooked noodles under cold water and toss lightly with a neutral oil.
While the noodles are cooling, prepare a medium-sized bowl. Next, combine all the designated ingredients for the Pad Thai sauce within the bowl and whisk vigorously until a smooth and homogenous mixture forms.

Once the noodles are ready, heat a skillet over medium heat. Initially, add a suitable amount of oil and sauté the minced garlic, green onions, and onions until fragrant and translucent. Subsequently, create space in the skillet and add beaten eggs, scrambling them gently. Finally, introduce the shrimp to the pan and stir-fry until they turn an opaque pink.

Now, integrate the cooked rice noodles into the skillet, followed by the prepared Pad Thai sauce. Continuously stir to ensure the noodles, sauce, eggs, and shrimp are thoroughly combined.

To enhance the flavor profile, incorporate bean sprouts, salt, pepper, and chili flakes to the skillet. Again, stir to distribute the ingredients evenly. Taste the Pad Thai and adjust the seasoning according to your preference.
Lastly, garnish the completed Pad Thai with fresh lime wedges and cilantro leaves for a vibrant and aromatic presentation.
Finally, Serve the Pad Thai hot, garnished with additional chopped green onions and a squeeze of lime juice, if desired.
