Make almond lace cookies at home with simple ingredients. Light, crisp, and see-through, these cookies are perfect as a treat or fancy dessert garnish. These delicate almond lace wafer cookies are gluten-free and have a wonderfully light, crisp texture. Dip them in chocolate or leave them plain, they’re always a hit!
1. Melt the butter in a small saucepan over a low heat. Then add the brown sugar, granulated sugar, and milk. Stir gently until the sugar has dissolved and the mixture is smooth. 2. Remove from the heat, pour into a bowl, and stir in the vanilla, sal,t and almond flour until well combined. Leave to stand for about 10 minutes to allow the mixture to thicken slightly.
3. Preheat the oven to 350°F and line a baking sheet with parchment paper. 4. Use a teaspoon to scoop the batter and place it on the baking sheet, leaving about 3 inches between each one as they will spread while baking. 5. Bake for 6–8 minutes until the edges of the biscuits are golden brown. 6. Leave the cookies to cool completely on the baking sheet before transferring them, as they are fragile when hot. 7. Enjoy these cookies as they are, or make sandwich cookies with Nutella, melted chocolate or your favourite jam.
