Apple Pie Filling 1. Combine water with cornstarch and set aside. Dice the apple about 1 cm then transfer it to a pan. Add the rest of the apple pie fillings ingredients except cornstarch mixture then cook over medium high heat until translucent. 2. Add cornstarch mixture then stir and cook until thicken. Remove from the heat and let it cool.
Spice Cookies 1. Preheat oven to 350°F or 175°C. 2. In a bowl, cream butter, sugar and brown sugar with electric mixer on low speed. Mix until almost all the sugar dissolved. Don’t forget to scrape the sides of the bowl. 3. Add egg, and vanilla extract, and beat again until smooth and fluffy. 4. Sift in flour, cinnamon, ginger, nutmeg, cloves, baking powder and salt then beat on low speed until completely combined. 5. Scoop 2 tablespoon of the cookie dough then roll the dough into a balls and roll it to a granulated sugar. Use your thumbs to gently press an indent in the center of the cookie dough then place it on a baking sheet lined with parchment paper. Place cookie dough 2 inch apart. 6. Scoop 1 tablespoon of apple pie filling then place it into the indentation of cookie dough and bake for 13 minutes. 7. Remove from the oven and let the cookies completely cool before serving. Enjoy!
