Cheesecake Crust 1. Crush biscoff biscuits with a rolling pin or a food processor and combine the crumbs with melted butter. 2. Pour into the 10.5 inch or 26 cm springform pan. Press down the crust mixture on the bottom and the sides of the springform pan with a hand then flatten using glass and place it into the fridge.

3. Add ¼ of the granulated sugar, and beat until well combined. Repeat the step to the rest of the granulated sugar. 4. Add the eggs one at a time at a low speed, beating after each addition until well combined. 5. Once the eggs have been added, scrape the side and the bottom of the bowl with a spatula. Add vanilla extract. 6. Add cornstarch and flour, beat until well combined. Do not over mix.

Cheesecake Filling 1. Preheat oven to 325ºF or 160°C. 2. In a big bowl, beat cream cheese using a hand mixer or stand mixer on a medium-low speed until smooth, soft and creamy, about 2 minutes.

8. Pour the cheesecake batter into a springform. To ensure it does not leak, wrap springform using aluminum foil. 9. Bake the cheesecake for 1 hour. When baking, do not open the door of the oven. The cheesecake is done when a small area in the center should be slightly jiggly and the edges should be puffed and light golden brown. 10. After 1 hour, turn off the oven and let the cheesecake sit in the oven for 1 hour after that let it completely cool at room temperature. 11. Refrigerated the cheesecake for at least 6 hours or overnight.

7. Add sour cream to the cheesecake mixture and beat well. Scrape the side and the bottom of the bowl with a spatula again and make sure all the ingredients are well combined.

Cranberry Sauce 1. In a saucepan, heat the frozen cranberry and sugar over medium-low heat, stir until the sugar is dissolved. 2. Turn the heat to medium-high, mash the cranberry while stirring and bring the cranberry mixture to boil until the sauce is thickened. 3. Turn off the heat then transfer the sauce to a bowl and let it cool completely.
