These Easy Beef Enchiladas recipe is made with a flavorful ground beef filling, Rolled up in soft tortillas, topped with melting cheese, and all smothered in a mouthwatering homemade enchilada sauce and baked to gooey cheesy perfection!
Enchilada Sauce 1. Heat oil in a saucepan, then add flour and stir to combine. Pour chicken stock and stir immediately until well combine. 2. Add the remaining of enchilada sauce ingredients, stir occasionally and cook for about 5 minutes or until the sauce is thicken. Set aside.
Beef Filling 1. Preheat oven to 350℉ or 170℃. 2. Heat oil in a pan then cook garlic and onion for 2 minutes. Add ground beef, cook and breaking it up until browned then pour enchilada sauce and stir to combine. Turn off the heat.
3. Pour the enchilada sauce to the casserole dish and swirl until the sauce cover the bottom of the casserole. 4. On your working surface, lay the tortilla then place about ⅓ cup of filling, roll it up then place it into the casserole. Do it to the rest of tortilla. 5. Pour the remaining enchilada sauce over the tortillas and sprinkle it with cheese. 6. Bake for 15 minutes or until the cheese is melted and the sauce is bubbles. Optionally garnish it with cilantro or parsley. Serve immediately. Enjoy!
