Edamame salad is an Asian and Japanese inspired salad served with sesame dressing. It’s crunchy, healthy, and nutty!

– 3 cup Raw Edamame – 1 cup Lettuce chopped – 1 cup Summer Crisp chopped – 1 cup Tomato divided in ¼ – 1 cup Kyuri Cucumber (I use small kyuri cucumber) – 1 tsp Salt – 1 cup Ice Cubes for ice bath – 4 tbsp Mayonnaise – 4 tbsp Sesame Dressing

Boiled Edamame 1. Boil water in a pot, add salt. 2. After the water boiling, add edamame then boil it for 3-4 minutes. 3. After 3-4 minutes, turn off the heat then remove from the pot and drains the boiled edamame.

4. Put in an ice bath/cold water to stop the cooking process. If you don't prepare an ice bath, you can substitute the process by putting the edamame on cool running water on a sink. Set aside. 5. After the edamame is cooled, store in the fridge until further use or remove the beans from the skin to serve as salad.

Edamame Salad 1. In a bowl in a circular position, place lettuce, summer crisp, tomato, cucumber, boiled edamame beans. Half portion for one bowl. 2. Lastly, pour the mayonnaise and sesame dressing. 3. Salad are ready to serve. Enjoy!
