1. Slice shallots, garlic and galangal then smash lemongrass and set aside. 2. Heat oil in a pan over medium heat and cook slice shallots and garlic for about 3 minutes until just fragrant, remove from the heat.

3. Add rinsed rice to a inner pot of rice cooker then add all the ingredients to the pot, stir to combine and close the lid. Start the cooker and let it cook until it switches to the "warm" setting. Once done, let the rice rest for about 10-15 minutes, then fluff it with a rice paddle or spoon before serving. 4. Serve warm with galangal fried chicken, fresh vegetables and sambal bawang. Enjoy!
