Brownies 1. In a medium mixing bowl, place butter and dark chocolate then bain marie until all melted, stir occasionally until well combined. Set aside. 2. In a large mixing bowl, beat egg and light brown sugar with a hand mixer until the color is turn pale and fluffy. Add the butter mixture and vanilla extract then fold with a spatula until well combined.
3. Sift in flour, cocoa powder, and salt and fold again until there is no lump. 4. Pour the brownie batter to a baking pan then bake for about 30 minutes or when you prick the brownie with a skewer and no batter sticks to the skewer.
Pistachio Kunafa 1. Chop kataifi and set aside. Melt butter in a pan over medium heat then add chopped kataifi and toast it for about 10 minutes or until crispy and golden brown. Transfer it to a mixing bowl. 2. Blending the roasted pistachio nuts and neutral oil into a food processor until it turns into a butter consistency. 3. Pour the pistachio butter into a toasted kunafa then mix until well combined.
Chocolate Ganache 1. Heat heavy cream in a saucepan over medium heat until bubbles appears on the edge of the saucepan. Turn off the heat. Add chocolate chips and let it sit for 3 minutes until the chocolate is melted and stir until well combined.
Assembly 1. Layer the pistachio kunafa over the brownies then pour the chocolate ganache on top and garnish it with chopped pistachio nuts, refrigerate it for 30 minutes or until the ganache is harden. Cut the brownie into 12 pieces and enjoy!
