In a pan sautée onion until fragrant over medium-high heat. Add ground beef, sausages, garlic, all-purpose flour, salt, and black pepper. Cook until the ground beef turned brown. Turn off heat, then transfer to a large pot.
Turn on the heat over medium heat. Add in potatoes, green chili, tomatoes, baked beans, frozen mixed vegetables, and beef broth.
Mixed everything until well combined. Add cumin, chili powder, salt, and black pepper. Stir until well combined.
Turn the heat to low heat, then bring the cowboy stew to boil and simmer for 1½ hours. Scrap the bottom of the pot once every 20 minutes to make sure nothing gets burnt.
After done cooking, turn off the heat, and cowboy stew is ready to serve.
