Beat eggs with cinnamon powder, sea salt, palm sugar, vanilla extract, nutmeg powder, and milk until evenly distributed. Set aside.
Cook ¼ of palm sugar, apple, and cinnamon powder. Stir until the palm sugar melted. Once the palm sugar melted, add milk. Stir and cook until the apple is caramelized. Transfer the apple to a bowl. Set aside.
Over medium heat, melt the butter. Dip the bread in the egg mixture until evenly coated and then cook until both sides of the bread are golden brown.
Transfer the french toast to a plate, and top it with caramelized apple. Dust the apple french toast with powdered sugar before serving. Enjoy!
