Spicy Shredded Chicken with basil

Ingredients

  • 1 lb Chicken breast fillet
  • 3 cloves Garlic
  • 6 cloves Shallot
  • ½ Onion sliced
  • 2 Large red Chilies cut into several pieces
  • 6 Curly red Chilies cut into several pieces
  • 6 Cayenne pepper
  • 3 Lime leaves
  • 1 Bay leaf
  • 1 Lemongrass
  • 1 segment Galangal
  • 1 cup Basil
  • ¼ tsp Salt
  • ¼ tsp White pepper
  • 1 tsp Sugar
  • 2 tsp Mushroom powder
  • Water

Instructions

  1. Prepare a pot, then boil the chicken until cooked. Then shred the chicken.

  2. Blend garlic, shallots, curly red chili, large red chili, and cayenne pepper with a little oil until smooth.

  3. Heat oil in a pan, then sauté the blended spice mixture, galangal, lemongrass, lime leaves, and bay leaves until the spices are cooked and fragrant.

  4. Add sliced onions, then stir and cook for a while.

  5. Add the shredded chicken and stir until well combined.

  6. Add seasoning: salt, sugar, pepper, and mushroom powder, then stir.

  7. Finally, add basil leaves and stir until well.

  8. Pour in a little water and cook until it's absorbed and the water reduces.

  9. Ready to serve!

Recipe Notes

  • Use boneless, skinless chicken for an even texture and avoid chewy oily fat from the chicken skin
  • Cook your aromatics on a lower heat, you want to be able to release their flavors without burning them
  • Finely chop the garlic, instead of mincing it. Minced garlic can burn quickly and become bitter.
  • You can serve this with brown rice or jasmine rice, noodles, or plain bread.
  • This recipe calls for spicy food, however, you can adjust your heat level by omitting the cayenne pepper.
