Cut the corn off the cob with a knife. Place it to a big bowl, set aside.
Chop the green onion and celery then transfer it to the bowl. Combine the rest of the ingredients to the bowl then stir with a spoon until mixed evenly.
Heat oil in a large skillet pan over medium-high heat, once heat drop a spoonful of the corn batter into the pan then flatten lightly with the back of the spoon.
Add more batter, leaving about 1 inch of space between the fritters. Fry for about 2-3 minutes until the bottom is golden brown. Then flip and continue frying for 2 minutes until all the sides is golden brown and crispy.
After frying remove fritters from the pan and drain on paper towels. Continue frying a new batch of corn batter. You will get about 15-20 corn fritters.
Serve it with your favorite sauce. Enjoy!
