Indonesian Yellow Rice (Nasi Kuning) in a Rice Cooker

Ingredients

Blend Seasonings

  • 5 Shallot
  • 3 clove Garlic
  • Turmeric
  • Candlenut
  • 2 tbsp Cooking Oil

Rice

  • 500 g Uncooked Rice washed and drained
  • 80 g Coconut Cream
  • 3 Lemongrass
  • 3 Bay Leaves
  • 3 Lime Leaves
  • 1 knuckle Galangal
  • 1 tsp Salt
  • 1 tsp Chicken Stock Powder
  • ½ tsp Pepper
  • 500 ml Water

Instructions

  1. Puree the seasonings except cooking oil using a hand blender or wet mill. Heat cooking oil over medium heat then sautee the seasoning puree until fragrant, about 3-5 minutes.

  2. Add coconut cream, water, salt, chicken stock powder, and pepper and stir until well combined. Cook until bubbling on the side of the pan. Turn off the heat.

  3. Slice galangal and smash lemongrasses. Place the rice to the rice pot, add bay leaves, lime leaves, lemongrass, and galangal. Pour the turmeric mixture then stir together until evenly combined. Cook according to your rice cooker instructions.

  4. Serve yellow rice with fried chicken, sweet and spicy fried tempeh, fried egg, and sambal. Enjoy!
