Ingredients

  • 1 pack of Egg noodle
  • 5 pieces of Fish balls, cut in half
  • 5 Oz Shrimp peeled and cleaned
  • 1 cup Carrots, peeled and sliced diagonally
  • cup Baby bok choy cut into several pieces
  • ¾ cup Baby corn sliced diagonally
  • 3 cloves of Garlic chopped
  • 6 Shallots chopped
  • ½ Onion sliced
  • 2 curly red pepper sliced diagonally
  • ¼ cup Scallion thinly sliced
  • 2 Egg beaten
  • ½ tbsp Oyster sauce
  • 1 tsp Fish sauce
  • 1 tsp Sesame oil
  • ½ tbsp dried Shrimp
  • 2 tbsp Cornstarch dissolved in 4 tbsp of water
  • ½ tsp Salt
  • ½ tsp Pepper
  • 2 tsp Mushroom Powder
  • ¾ tsp Sugar
  • 2 cup Water
  • Vegetable oil

Instructions

  1. Prepare a pot of water and boil the egg noodles until they are cooked. Then, drain and set aside.

  2. Heat some oil in another pan and add the cooked noodles. Shape them into a round form and fry until they become crispy. Remove and set aside.

  3. Sauté dried shrimp, garlic, shallots, curly red pepper, and onion until fragrant.

  4. Add shrimp, fish balls, carrots, and baby corn. Cook until the carrots and corn are halfway cooked, then pour in the water.

  5. Add oyster sauce, fish sauce, sesame oil, mushroom powder,sugar, salt, and pepper. Stir until well combined.

  6. Add baby bok choy and beaten eggs, and stir until well combined. 

  7. Pour the cornstarch mixture, stir, and cook until it thickens slightly. Then, sprinkle with scallions.

  8. Arrange the fried noodles on a plate, then pour the vegetable mixture on top. 

  9.  Enjoy your delicious noodles!
