Vietnamese Lemongrass Chicken with Vermicelli Noodles

Ingredients

  • 1 pack of Vermicelli Noodles soaked in hot water until soft, then drained
  • 1 medium Cucumber  julienned
  • 1 medium Carrot  julienned
  • ¼ cup Cilantro chopped

Marinated Chicken

  • ½ lb Chicken thigh fillet
  • 5 cloves Garlic
  • 3 stalks Lemongrass sliced finely
  • 2 tbsp Fish sauce
  • tbsp Soy sauce
  • tbsp Honey
  • ½ tsp Black Pepper

Nuoc cham dipping sauce

  • ¼ cup Water
  • 3 tbsp Granulated sugar
  • tbsp Fish sauce
  • 2 tbsp Lime juice
  • 2 clove Garlic minced
  • 4 curly red chili pepper minced
  • A pinch of Salt

Instructions

  1. In a food processor, combine  all marinated chicken ingredients ( garlic, lemongrass, fish sauce, soy sauce, honey, and black pepper)

  2. In a medium bowl, pour the marinade over the chicken. let it sit for 30 minutes

  3. For the sauce: mix water, sugar, and fish sauce. After that, add garlic, red chili peppers, lime juice and a pinch of salt, stir until well combined.

  4. Heat a little oil in a pan over medium heat. Grill the chicken until both sides are golden brown. Slice the chicken lengthwise, then set aside.

  5. To assemble, place the cooked vermicelli noodles in a serving bowl. top with sliced chicken, cucumber, carrot, and cilantro

  6. Pour the sauce over the noodle bowl and drizzle with extra lime juice

Recipe Notes

  • Use a different protein. Instead of chicken, you can use shrimp or fish fillets as a seafood alternative. Adjust the cooking time accordingly, as seafood tends to cook faster than chicken. Moreover, you can also try beef, tofu or some variety of meatballs would all be delicious substitutes for chicken.
  • After cooking, the chicken will have juices come out. Save the juice and pour it on top of the chicken before serving!
  • Fresh Herb Options: While cilantro is commonly used in this dish, feel free to serve this chicken with your favorite herbs such as cilantro, mint, Thai basil, or even a combination of herbs to add different layers of flavor. The herbs make the chicken taste more refreshing and flavorful!
  • Gluten-Free Option: If you require a gluten-free version, ensure that the soy sauce used is gluten-free or use a gluten-free soy sauce alternative.
  • If you prefer a milder flavor, reduce the amount of red chili peppers in the sauce or remove the seeds before adding them. For those who enjoy extra heat, Feel free to serve these bowls with sriracha or more chili peppers or even include a sprinkle of chili flakes
