Yaki Udon (Stir Fries Udon Noodles)

Ingredients

  • ½ lb Shrimp
  • 2 serving Udon Noodles vacuum pack
  • 1 cup Carrot julienned
  • 1 cup Shiitake Mushroom sliced
  • ½ medium Onion sliced
  • 2 stalk Green Onion/Scallion cut 2 inch long
  • 2 clove Garlic sliced

Sauce

  • 2 tbsp Dark Soy Sauce
  • 2 tbsp Oyster Sauce
  • 1 tbsp Brown Sugar
  • ½ tsp Rice Vinegar

Instructions

  1. In a small mixing bowl, combine all the sauce ingredients. Mix well and set aside.

  2. Heat cooking oil over medium high, add shrimp and stir fry until both side of the shrimp change color. Remove from the pan.

  3. Add cooking oil to the same pan, stir fry onion and garlic for 2 minutes than add carrot and mushroom and cook until the carrot are soften. Stir occasionally.

  4. Add udon noodle, cooked shrimp, and sauce mixture then toss them together until well combined. Add scallion and stir for 1 minute.

  5. Place yaki udon to a serving plate and serve immediately. Enjoy!

Recipe Notes

  • Make the stir-fry sauce ahead of time to simplify adding it to the udon noodles later. This way, you won't have to add each sauce separately.
  • Before adding the noodles to the stir-fry, separate them. Packaged noodles often stick together, so it's best to loosen them up before cooking. Just drop them in hot water to separate easily.
  • If you've got a wok, use it! Woks distribute heat evenly, giving your stir-fried noodles that perfect crispy texture without needing much oil.
  • Serve immediately for the best taste. Noodles are at their prime when freshly prepared, so get your stir-fry ready just before mealtime.
