Char Siu Chicken with Noodles

Ingredients

  • 1 lb Chicken thigh fillet
  • 6 clove Garlic
  • ½ tbsp Red mold rice
  • 2 tbsp Rice vinegar
  • 3 tbsp Soy sauce
  • 3 tbsp Hoisin sauce
  • 1 tbsp Brown sugar
  • tsp Chinese Five spice
  • 1 tbsp Sesame oil
  • ½ tsp White pepper
  • 1 tsp Salt
  • 4 tbsp Honey
  • Unsalted butter

Noodle Broth

  • Noodle
  • 1 tsp Mushroom powder
  • ½ tbsp Soy sauce
  • 1 tsp Fish sauce
  • 1 tbsp Garlic oil
  • 1 tsp Sesame oil
  • Pinch of white pepper

Instructions

  1. Blend garlic and red mold rice with a little water. 

  2. Prepare a medium-sized bowl, mix the chicken with rice vinegar, soy sauce, hoisin sauce, brown sugar, Chinese five spice, sesame oil, salt, white pepper, honey, and the blended garlic and red mold rice mixture. Marinate for approximately 2 hours.

  3. Heat a pan until the butter is melted, then grill the chicken until both sides are browned. then slices into several parts.

To assembly:

  1. Boil water in a pot, then cook the noodles until done.

  2. Pour soy sauce, mushroom powder, garlic oil, fish sauce, sesame oil, and a pinch of white pepper into a bowl, then add the cooked noodles and mix until the seasoning is evenly distributed.

  3. Add pieces of char siu chicken on top.

  4. Ready to serve!
