Cut the yellow plantain in half widthwise.
In a pan fry, heat cooking oil over medium heat.
Fry the yellow plantain until nice and golden.
Turn off the heat then rest the fried yellow plantain on a cooling rack to remove excess oil.
Pound lightly the fried yellow plantain using a smooth side meat tenderizer until it becomes slightly flat.
For one portion, put two pieces of fried yellow plantains on a plate and top with 1.5 tbsp chocolate sprinkles, 1 tbsp shredded cheddar cheese, and 1 tbsp sweetened condensed milk.
