What’s Inside Olympic Village Chocolate Muffins
Chocolate Muffins
- All-purpose Flour: The base of the muffin, provides structure.
- Cocoa Powder: Using unsweetened cocoa powder ensures the muffins have an intense chocolate taste without extra sweetness.
- Sugar: We used a combination of granulated sugar and brown sugar for sweetness, moisture, and texture. Also, molasses in brown sugar contributes to the rich flavor and soft texture.
- Baking Powder: A leavening agent that helps the muffins rise and become fluffy. It ensures the muffins are light and airy.
- Baking Soda: Works with the baking powder to provide lift. It also reacts with acidic ingredients like yogurt or buttermilk to create a tender texture.
- Salt: Balances the sweetness and enhances the overall flavor.
- Instant Coffee Powder: This enhances the chocolate flavor, making it more intense and rich. Coffee and chocolate are a great pairing that amplifies each other’s flavors.
- Egg: Provides structure and also adds moisture and richness to the batter.
- Vegetable Oil: Oil makes the muffins moist and tender. It also helps to keep the muffins soft even after cooling.
- Milk: Adds moisture and helps to dissolve the dry ingredients, creating a smooth batter. Milk also contributes to the tenderness of the muffins. For richness and better flavor.
- Yogurt or Milk: Yogurt adds moisture and a slight tanginess that complements the sweetness. If using milk instead, it will make the muffins a bit lighter in texture.
- Vanilla Extract: Adds a depth of flavor and enhances the overall taste of the muffins. Vanilla pairs well with chocolate, giving the muffins a rich, rounded flavor.
- Dark Chocolate Chunks: Add pockets of intense chocolate flavor throughout the muffins. The dark chocolate gives a slightly bitter contrast to the sweet muffin base.
- Milk Chocolate Chunks: These add a sweeter, creamier chocolate taste. The combination of dark and milk chocolate chunks ensures a balanced chocolate flavor.
Chocolate Ganache
- Dark Chocolate: This will be melted to create a rich and glossy ganache to top the muffins. Dark chocolate gives the ganache a deep, luxurious taste.
- Heavy Cream: Used to make the ganache smooth and creamy. The cream helps the ganache stay soft and adds richness to the chocolate.
Let’s Make Olympic Village Chocolate Muffins
First, preheat the oven to 355℉ or 180℃. Line the muffin pans with liners.
Second, in a mixing bowl, place all the dry ingredients and mix well with a whisk. Then, sift the dry ingredients to prevent over-mixing when combined with wet ingredients.
Then, in another mixing bowl, combine the wet ingredients and mix well. Pour them into the dry mixture. Mix with a whisk until smooth and there are no lumps. Avoid over-mixing to keep the muffins tender.
Next, add chocolate chunks to the batter and fold with a spatula. Scoop the batter into the prepared muffin liners, filling them fully. Add extra chocolate chunks on top.
Bake for 20 minutes, or until a wooden toothpick inserted into the center comes out mostly clean. Remove from the oven and let them cool.
For the Chocolate Ganache Filling:
While the muffins are baking, heat heavy cream in a saucepan over medium heat until bubbles appear on the edge of the saucepan. Turn off the heat, then add chocolate chips and let sit for 3 minutes until the chocolate is melted. Stir until well combined.
After the ganache has cooled and thickened, transfer it to a piping bag.
Finally, with a knife or chopstick, make a deep hole in the center of the cooled muffins and fill it with chocolate ganache until it comes out the top.
Enjoy your Olympic Village Chocolate Muffins, I can’t easily forget this recipe because it is too delicious to make only once. Make sure to recreate this recipe at home and you’ll thank me later 😉
Recipe Notes;
- I prefer dark chocolate with a cocoa content of at least 60%. For these chocolate muffins, you can mix dark, semi-sweet, and milk chocolate. I recommend using chocolate chunks rather than chips, as chunks create delicious chocolate puddles as the muffins bake.
- While you can substitute white sugar for brown sugar, the latter contributes to a moister and softer muffin. I find the flavor of brown sugar enhances these muffins more than white sugar. Alternatively, you can use coconut palm sugar if you prefer. Also, brown sugar gives crunchy edges texture on the top right after the baked
- For the best chocolate flavor without any acidity, I always suggest using Dutch-processed cocoa powder. It provides a rich, dark chocolate flavor and color to your baked goods. However, regular cocoa powder or cacao powder can also be used, though the results may vary slightly.
