In a mixing bowl, mix peanut butter with powdered sugar until well combined. Spoon about 1 tablespoon and shape it into a ball. Chill in a fridge while making the chocolate cookies dough.
In a bowl, whisk together flour, cocoa powder, baking soda, and salt. Set aside.
Beat butter with brown sugar and granulated sugar with hand mixer until pale. Add in egg and vanilla extract and beat again until the mixture is fluffy.
Mix in the dry ingredients and beat until the dough is well combine.
Use a large cookie scoop to scoop the dough into 20 portions. Flatten the dough with your hand and place the chilled peanut butter in the center then wrap it until the peanut butter is completely covered and roll into a smooth ball of cookie dough. Do it with the rest of the dough. Chill in the fridge for 30 minutes.
Preheat oven to 350ºF or 175°C. Line baking sheet with parchment paper. Put the cookie dough balls 2 inches from each other so they will not stick when baked.
Bake for 12 minutes. Top the chocolate cookies with chocolate chips then bake again for 2 minutes. Cool for 2-5 minutes before removing to wire racks to cool completely. Enjoy!
