Well, since my previous post about the OG peanut butter cookies is make great cookies. I’m still exploring this peanut butter thing. Moreover, I still have skippy leftovers. So, I thought this would be a hit to make other versions of peanut butter cookies even tho, today is about peanut butter filling.
As for today, I’m combining two of my favorite things ever – chocolate and peanut butter. They truly are the heaven combination. These Peanut Butter Stuffed Chocolate Cookies are thick, chewy, crisp on the edges, soft, and chocolatey, with a delicious peanut butter surprise.
The peanut butter filling stays soft and gooey in the center, which pairs perfectly with the thick and chewy chocolate cookies. I would recommend eating this with a glass of milk. what a nice life tho!
I made these soft cookie versions with bigger sizes. This is really perfect for sharing if you have some gathering event with your friends or family. I remember when I was at University. my friends and I always share food, snacks, and beverages. in our leisure time, we would go to one of our friends’ dormitories to have a cooking agenda with minimal ingredients since our pocket money just limited at that time. So happy and memorable to think about that time, I miss my friends already.

Ingredients of Peanut Butter Stuffed Chocolate Cookies
Peanut Butter
- Creamy Peanut Butter; is the star ingredient in these cookies, providing the signature peanut flavor for filling. for best results, I recommend using a smooth peanut butter that’s a bit processed, like Jif or Skippy. I use Skippy here.
- Powdered Sugar; this is my personal addition to cookie filling, you can add more sweetness or no if you’re on reducing some sugar.
Chocolate Cookies
- All-purpose Flour; is the primary dry ingredient that provides structure to the cookies. It contains proteins that form gluten when mixed with liquid, giving the cookies their structure and chewiness.
- Cocoa Powder; is also a main ingredient for making this chocolate chocolate cookies, you can use any cocoa powder 50% composition of dark chocolate. I recommend using an unsweetened, dark for the best flavor.
- Butter at room temperature; I use unsalted butter here.
- Sugar Here I use both Brown sugar and White Granulated Sugar; A combination of brown sugar and regular white sugar, for the perfect chewy cookie texture. brown sugar complements the peanut butter flavor and contributes to the cookies’ chewy texture. if you want a darker color, you can use dark brown sugar
- Egg at room temperature
- Baking Soda; an agent that helps the cookies rise and spread during baking, contributing to a slightly different texture
- Salt; adding some taste and enhancing the overall flavor of the cookies
- Vanilla Extract; adds a sweet, aromatic note that complements the peanut butter
- Dark Chocolate Chips; for garnish, chocolate chips are for topping your cookies. They are totally optional.
Instructions for Peanut Butter Stuffed Chocolate Cookies
Peanut Butter Filling
Let’s start with making the peanut butter filling. In a mixing bowl, mix peanut butter with powdered sugar until well combined.
Spoon about 1 tablespoon and shape it into a ball. Then, Chill in a fridge while making the chocolate cookie dough. move to the next step
Chocolate Cookies Dough
After finishing making the peanut butter filling, now, we’re going to make the chocolate cookie dough. start with preparing a bowl. Then, whisk together all-purpose flour, cocoa powder, baking soda, and salt. Set aside this as a dry mixture.
Next, beat butter with brown sugar and granulated sugar with hand mixer until pale. Add in egg and vanilla extract and beat again until the mixture is fluffy.
After that, Use a large cookie scoop to scoop the dough into 20 portions. Flatten the dough with your hand and place the chilled peanut butter filling in the center then wrap it until the peanut butter is completely covered and roll into a smooth ball of cookie dough.
when the cookies are complete and perfectly fit. Do it with the rest of the dough. Chill in the fridge for 30 minutes.
Let’s bake the cookies. Preheat oven to 350ºF or 175°C. Line the baking sheet with parchment paper. Put the cookie dough balls 2 inches from each other so they will not stick when baked.
Bake for 12 minutes. Top the chocolate cookies with chocolate chips then bake again for 2 minutes. Cool for 2-5 minutes before removing to wire racks to cool completely. Enjoy!
