With a chopper, blend garlic, shallot, bird's eye chili, red chili together until smooth.
In a large pan, heat cooking oil over medium heat then cook the spice mixture for about 3 minutes.
Add water and stir until combine. Add sweet soy sauce, ketchup, salt, pepper, and fried shallot and stir again until well combined.
Add egg noodles, shredded cabbage, and chopped bok choy. When the noodles are half cooked, add in beaten egg and stir well.
Turn off heat once the noodles are cooked then transfer it to a plate. Sprinkle the mie goreng with fried shallot before serving. Enjoy!
