Mie Goreng - Indonesian Fried Noodles

Ingredients

  • 250 g Egg Noodles
  • 2 Egg
  • 1 cup Cabbage shredded
  • 1 cup Bok Choy chopped
  • 6 clove Garlic
  • 10 Shallot
  • 6 Bird's Eye Chili / Thai Chili to taste
  • 6 large Red Chili
  • 2 tbsp Sweet Soy Sauce kecap manis
  • 2 tbsp Ketchup
  • 1 tbsp Cooking Oil
  • ½ cup Water
  • 1 tsp Salt to taste
  • ½ tsp Pepper to taste
  • 2 tbsp Fried Shallot 2 tsp for garnish

Instructions

  1. With a chopper, blend garlic, shallot, bird's eye chili, red chili together until smooth.

  2. In a large pan, heat cooking oil over medium heat then cook the spice mixture for about 3 minutes.

  3. Add water and stir until combine. Add sweet soy sauce, ketchup, salt, pepper, and fried shallot and stir again until well combined.

  4. Add egg noodles, shredded cabbage, and chopped bok choy. When the noodles are half cooked, add in beaten egg and stir well.

  5. Turn off heat once the noodles are cooked then transfer it to a plate. Sprinkle the mie goreng with fried shallot before serving. Enjoy!

Recipe Notes

  • The key to the recipe lies in Sweet soy sauce (kecap manis): if you don't have sweet soy sauce, you can replace it with 1:1 soy sauce and honey or brown sugar
  • If you want to make it vegan, leave out the egg and replace the egg noodles with vegan noodles.
  • You can replace the vegetables with your favorite vegetables. 
  • You can add the topping with some protein too, such as chicken, shrimp/ seafood, or lamb.
