History of Mie Goreng

Mie Goreng (or Mee Goreng) is an Indonesian noodle dish that’s also found in Malaysia and other parts of South East Asia
These stir-fried noodles are a popular street food that was influenced by Chinese immigrants to Indonesia and are inspired by Chinese chow mein noodles. Despite their Chinese origins, these noodles are Indonesian owing to the use of sweet soy sauce and the preference of proteins such as chicken or shrimp rather than pork, which is more common in Chinese cooking.
Mie Goreng (sometimes spelled mee goreng) simply means “fried noodles”, simply Indonesian Fried Noodles. so as you might imagine, many many variations of this dish can be made. So feel free to change up the veggies and protein!

Mie goreng is an Indonesian stir-fry noodle dish with egg noodles in a sweet-spicy sauce. The sauce is a simple mixture of soy sauce, sweet soy sauce, and spicy sriracha, something you can whip together at a moment’s notice from ingredients you likely have readily on hand.
A helpful midnight street food meal
FYI, mie goreng is a street food that will you find everywhere in Indonesia. This street food will start selling from maghrib or around 6 pm until midnight or dawn. The seller usually has Nasi Goreng, this mie goreng, Kwetiau, and Cap cay. I remember when midnight came, and I didn’t have anything to eat, but already starving, this mie goreng is a savior lol. Thank you to the abang or seller who helped me through that hard ( craving ) moment.

For Today’s recipe, I will make this mie goreng, I always thought that making this mie goreng is a hard thing to do, but luckily it is not as bad as I thought. Actually, it’s really easy and yummy taste guarantee. So, now I don’t need to buy at midnight because I can make it at home with my husband while staying up.

Ingredients of Mie Goreng

Main Ingredients
- Egg Noodles; Yellow Chinese egg noodles (such as chow mein noodles) are perfect for making mie goreng. In a pinch, you could use spaghetti though it’s not really the best or most authentic substitute. For a hack; You can use noodles from instant noodles and leave out the seasonings too. I like using instant noodles for Mie Goreng because you get that signature crinkly look just like you get from street food vendors!
- Sweet Soy Sauce kecap manis; it’s a paid actor here. If you can’t find kecap manis to purchase it, you can make a variation yourself for this recipe. This is a must in Indonesian mie goreng. It contributes some sweetness and that beautiful darker color to the overall dish. The key ingredient in the signature sticky noodle sauce is Kecap Manis which is a syrupy sweet soy sauce that adds both flavour and sweetness to the sauce as well as thickening it.
Others

- Veggies, I use Cabbage Shred and Bhok choy chop; cabbage is a kind of complement to these famous noodles. If you’d like you can swap them out for another member of the cabbage family, bok choy. Either would be delicious here.
- Egg; You know it’s kinda complete package for a mie goreng with egg, you can double the egg too with add some sunny side as garnish. Not only does it taste delicious but adds some protein to the dish.
- Garlic; This is a must in Indonesian fried noodles!
- Shallot; Garlic and shallot are the main ingredients for Indonesian food recipes. It also adds aromatic smells to the food
- Bird’s Eye Chili / Thai Chili to taste; This is for some spicy kicks to your mie goreng. Adjust with your heat level and it also balances the sweet taste from kecap manis.
- Large red Chili; Actually, large red chili isn’t spicy, it is used for adding pretty color and texture to the noodles
- Ketchup; for adding some sour flavor
- Cooking Oil; I use vegetable cooking oil, feel free to substitute with olive oil for a healthier one.
- Water; to absorb all the stirfrying sauce into the noodles and also cook the noodles, just make sure not to make noodles too soggy
- Salt and Pepper to taste; Just a little salt to round out the needed saltiness and savory flavor and the white pepper adds depth.
- Fried Shallot 2 tsp for garnish; you can buy instant at bought store here, if you aren’t really into shallot things, just skip this part or you can add green onion that would be great!
How to Make Mie Goreng

To begin, use a chopper to blend garlic, shallot, bird’s eye chili, and red chili until smooth. Then let’s cook the noodles first. Bring the noodles to boiling water then set a side

Next, in a large pan, heat cooking oil over medium heat. Add the blended spice mixture to the pan and cook for about 3 minutes, stirring continuously. This crucial step helps release the flavors of the spices.
Now, add water to the spice mixture and stir until well combined. Introduce sweet soy sauce, ketchup, salt, pepper, and fried shallot to the pan. Thoroughly stir the mixture, ensuring all ingredients well combine, and the flavors are distributedly even

Cook Noodles and Vegetables:
Moving on, add egg noodles, shredded cabbage, and chopped bok choy to the pan. Allow the noodles to cook until they are halfway done. Then, pour in the beaten egg and stir well, ensuring that the egg evenly coats the noodles and vegetables.

Finish and Serve:
Next, turn off the heat after your noodles fully cooked. Transfer the Mie Goreng to a plate and sprinkle fried shallot on top for added flavor and a crunchy texture.
Serve your delicious Mie Goreng. Enjoy!
Recipe Notes

- The key to the recipe lies in Sweet soy sauce (kecap manis): if you don’t have sweet soy sauce, you can replace it with 1:1 soy sauce and honey or brown sugar
- If you want to make it vegan, leave out the egg and replace the egg noodles with vegan noodles.
- You can replace the vegetables with your favorite vegetables.
- You can add the topping with some protein too, such as chicken, shrimp/ seafood, or lamb/ goat.
