Beef mushroom bokcoy stir fry is a quick and easy, healthy stir-fry recipe. Nutritious side dish with protein and fiber in one side dish.

As you guys know it’s not a secret that we love beef so much. This recipe is a basic stir fry. All you need is beef, two kinds of mushrooms and bokcoy with added oyster sauce into it. Making this beef mushroom bokcoy stir fry will complete your lunch or dinner. It will be more perfect if you eat it with warm rice.

We use two kind of our favorite mushrooms in this dish. They are cloud ear mushroom and shimeji mushroom. Cloud ear mushroom’s color is dark brown. The texture is gelatinous and elastic. Sometimes people call it Chinese mushroom.

Different from cloud ear mushroom, shimeji mushroom is come from Japan. Shimeji mushroom has a pleasant, firm, slightly crunchy texture and a slightly nutty flavor. It also contains copper, B vitamins, potassium and zinc. It also very suitable for stir fry.

With this recipe, you can get protein and fat from the beef, protein and many other nutrients from mushrooms, and also fiber from bokcoy. You also can get variation of texture so it doesn’t get bored!

How to make beef mushroom bokcoy stir fry

  • Beef mushroom bokcoy stir fry is a quick and easy, healthy stir-fry recipe. Nutritious side dish with protein and fiber in one side dish.

In a skillet add vegetable oil on high heat. Add sirloin beef and cooking for 1 minute each side. Set aside.

Using the remaining oil from the cooking beef, saute shallot and garlic on medium heat for 1 minute.

Then change the heat to high, add shimeji mushroom, cloud ear mushroom and salt. Cook for 2 minutes.

Add bokcoy, chicken stock powder, sugar, black pepper, and oyster sauce. Stir and continue cooking until the bokcoy half cooked.

Add cooked sirloin beef from earlier. Stir for 1 minutes. Adjust the saltiness then turn off the heat.

Ingredients

  • 400 g Sirloin Beef cut thinly
  • 1 package Shimeji Mushroom about 1,5 cups
  • 1 package Cloud Ear Mushroom about 1,5 cups cut bite sized
  • 2 cups Bokcoy cut 1 inch length
  • 4 small Shallots finely chopped
  • 2 cloves Garlic finely chopped
  • 1 tbsp Oyster Sauce
  • 1 tsp Chicken Stock Powder
  • 1 tsp Black Pepper
  • 1 tsp Granulated Sugar
  • Salt to your taste
  • 2 tbsp Vegetable Oil

Instructions
