Chicken salad tortilla bowl is perfect for healthy lunch. Not only fulfilling, it also taste really fresh and delicious.
Who are want to diet but still want to eat good food? That’s so me hahaha. I’ve been on dieting for almost month ago and my current weight is 132 lbs with 5’1 ft tall. Even though I haven’t lost a lot of weight, but I enjoy doing it.
My way of doing this not only for losing weight, but also for healthy lifestyle. What I do is that I don’t only eat vegetables, but other good food, too. I can eat whatever I want as long as I don’t eat it too much (except instant noodles and another junk foods). And also I have to stop eating after 6PM. Drink 2 liters water per day and don’t forget to drink 1 cup hot lemon water once I wake up. That are some of my tips hehe. I have a cheating day too, once in a week at least.
Not only I have to watch what I eat. I try to exercise every day (ugh I hate exercise). Even though I hate exercise, I forced myself to do it, even only once in two days. This is my second time on a diet. I did dieting like one year ago, but I gain weight again even more after I stop doing it. The reasons are because I didn’t do exercise at all and I love bakso (meatballs) so much. By the way bakso or Indonesian meatballs have very large calories. Maybe one day I will share the recipe to you.
Long story short because I try to eat healthy as I can, I change my lunch a little bit. That’s why I have an idea to make chicken salad tortilla bowl.
Brush the tortilla with olive oil, form into a bowl on a ovenproof bowl. Bake at 350°F for 10-12 minutes.
For the dressing, combine 4 tbsp mayonnaise and juice from 1/2 lemon.
Cook chicken breast strips in a pan with cooking oil at medium high. Cook 2 minutes every sides until all golden brown. Set aside and cut the chicken into 1/2 inch pieces.
The ingredients for vegetables are lettuce, tomato and cucumber. Chop it for about 1/2 inch.
Place all vegetables and cooked chicken breast on a large bowl. Season with salt and black pepper. Stir to combine.
Place chicken salad on tortilla bowl and add lemon mayo dressing. Chicken salad tortilla bowl is ready to serve.

Ingredients
- 400 g Chicken Breast Strips
- 5 Tortilla
- 1/2 head Lettuce
- 1 large Red Tomato
- 1 Cucumber
- 1/2 Lemon
- 4 tbsp Mayonnaise
- Salt
- Black Pepper
- Olive Oil
