I make this mutton biryani rice because my family really likes mutton meat. Tips for cooking delicious mutton biryani for tender meat is by cooking by pressure cooker.
How to make pressure cooked mutton biryani
Soak basmati rice in lukewarm water for 30 minutes. Boil water with basmati rice ingredients and soaked basmati rice.
Boil for 12 minutes in high heat. After 12 minutes turn off the heat, remove basmati rice from pot and drain. Let cool.
Mix mutton leg with mutton curry ingredients on the pressure cooker and cook for 20 minutes.
After 20 minutes, turn off heat then transfer mutton curry to a pot and carefully layers it with basmati rice without breaking the rice.
Pour half of the ghee and sprinkle half of the fried shallot and half of coriander and mint leaves over basmati rice. Repeat the layers.
Cover it with a lid and cook at low heat for 10 minutes. After 10 minutes, turn off the heat and open the lid then transfer the mutton biryani into a plate.

Ingredients
Basmati Rice
- 250 g Basmati rice
- 1 tbsp Salt
- 1 L Water
- 2 Bay leaves
- 1 small Cinnamon stick
- 4 Cloves
- 3 Green cardamoms
- 1 Black cardamoms
- 8 Black peppercorns
- ¼ tbsp Garlic paste
- ¼ tbsp Ginger paste
Mutton Curry
- 600 g Mutton leg
- ¼ cup Fried shallot
- 120 g Yogurt
- ¼ cup Coriander & mint leaves chopped
- 1½ tbsp Biryani masala
- 1 Dried plum
- 2 Bay leaves
- 1 small Red tomato
- 8 Black peppercorn
- ½ tbsp Paprika powder
- 3 Green cardamom
- 1 Black cardamom
- ¼ tbsp Ginger paste
- ¼ tbsp Garlic paste
- Salt
- ½ cup Water
Assembly
- 2 tbsp Ghee
- ½ cup Fried Shallot
- ¼ cup Coriander & mint leaves chopped
