Ingredients of Cheesy Broccoli Chicken Fritters

- Broccoli; the veggie in these fritters is broccoli, but you can also try shredded carrot, corn, cabbage shredded zucchini, or spinach
- Ground chicken; I use ground chicken here, you want to use ground meat in this recipe because it helps everything stick together but you could easily swap for minced turkey instead if you prefer
- Egg; helps hold everything together so they do not fall apart.
- Mozzarella Cheese; Mozzarella cheese adds a creamy and melty texture to the fritters. Its mild, milky flavor complements the chicken and broccoli, creating a gooey, cheesy interior. feel free to substitute it with your favorite cheese.
- Breadcrumb; acts as a flour to bind them together with egg.
- Chopped dill; Chopped dill contributes a fresh and herby flavor to the fritters. It adds brightness and complements the savory notes of the other ingredients. I like a blend of rosemary and oregano but thyme, basil, and dill would also be delicious. If you don’t have any fresh herbs you can use about a teaspoon of Italian seasoning or the dried variety of any of the herbs
- For seasoning I use Onion Powder, Garlic Powder, Salt, Black Pepper, and Chicken Powder; feel free to add or omit all the seasoning with your preference
- Vegetable oil; for frying. Use a neutral oil like vegetable oil, canola oil, or sunflower oil. However, If you are opting to bake these instead, I recommend using olive oil to brush onto your fritters.
How to Make Cheesy Broccoli Chicken Fritters

Begin by placing a skillet on the stove, filling it with water, and bringing it to a boil. Add the broccoli florets to the boiling water and cook until they are tender, but not too long. Once done, drain the broccoli and set it aside.
Next, Finely chop the broccoli using a knife, then set it aside. This step ensures that the broccoli integrates seamlessly into the fritter mixture, distributing its flavor evenly

Then, In a medium-sized mixing bowl, combine the ground chicken, chopped broccoli, mozzarella cheese, chopped dill, eggs, breadcrumbs, onion powder, garlic powder, salt, black pepper, and chicken powder.
Mix the ingredients thoroughly until well combined. This will create a cohesive and flavorful mixture. Don’t forget To prevent the mixture from sticking to your hands, rub them lightly with oil.

Take a few spoonfuls of the mixture and shape them into mini patties. Repeat the process until you’ve used all the mixture, forming uniform fritters.
Now, Heat oil in a non-stick skillet over medium heat, then cook the patties until both sides are golden brown. Carefully place the fritters in the skillet, allowing them to cook until both sides achieve a beautiful golden brown color. This step takes approximately 3-4 minutes per side.
Lastly, Serve the Broccoli and Chicken Fritters with your favorite sauce or dip. I personally like to dip it with chili oil lol or anything to complement the flavors.

Recipe Notes;
- Make sure you have thoroughly cooked or boiled the broccoli before adding it to the chicken mixture – Otherwise, it will be crunchy in the patties and a little bitter greenish
- Try flipping the fritters only once in the pan and avoid pressing them down to preserve the cheese and juices during cooking, or else to avoid the fritters are falling apart/fragile
- Do not overcrowd the pan, consider cooking the patties in some batches if necessary.
- You can try some variation by changing the ground chicken with ground beef or changing the veggies from broccoli to kale, cabbage, or lettuce though.

- 1 cup Breadcrumb
- 2 tbsp Chopped dill
