Its origins can be traced back to Chinese influences, where similar fried meatball dishes exist. However, the unique flavors and ingredients used in Bakso Goreng reflect the rich culinary heritage of Indonesia. This is such Indonesian-style and great comforting food! Bakso goreng originates from Indonesia and directly translates to “fried meatballs”, where bakso means “meatballs” and goreng means “fried”.

Ingredients of Fried Meatball
- Chicken Thigh Fillet: The chicken thigh fillet serves as the primary protein in the meatball mixture, adding flavor and texture. Provides the main protein base for the meatballs. Chopped finely for even texture.
- Shrimp (Trimmed, Deveined, and Washed): Shrimp adds seafood flavor and enhances the overall taste of the meatballs. Add another layer of flavor and texture to the meatballs.
- Fried Onion: Fried onions provide a rich, savory flavor and also add texture to the meatballs.
- Egg: The egg acts as a binding agent, helping to hold the meatball mixture together.
- Tapioca Flour: Tapioca flour helps to bind the ingredients together and provides a chewy
- texture to the meatballs.
- All-Purpose Flour: All-purpose flour adds structure and helps to coat the meatballs before frying, creating a crispy exterior.
- Rice Flour: Rice flour helps to make the meatballs light and crispy when fried. It also contributes to the texture of the coating.
- Sesame Oil: Sesame oil adds a distinct nutty flavor to the meatballs, enhancing their overall taste.
- Baking Powder: Baking powder helps the meatballs to rise slightly and become light and fluffy.

Sauce
- Curly chili red pepper; Add spice and heat to the sauce (adjust amount for preference).
- Garlic; Contributes savory and pungent flavor to the sauce.
- Sugar; Adds sweetness to balance the other flavors.
- Salt; Enhances the overall flavor of the sauce.
- Mushroom Powder; Adds umami depth to the sauce.
- Vinegar; Provides acidity and tanginess to the sauce.
- Water; Base of the sauce for desired consistency
- Cornstarch; for thickening sauce
How to Make Fried Meatball
To begin, blend shrimp, chicken thigh fillet, garlic, fried onions, ice water, and ice cubes until smooth with a blender or hand blender.
Next, add the remaining ingredients listed in the recipe which are tapioca flour, all-purpose flour, egg, baking soda, baking powder, rice flour, and the seasoning. Stir until everything is evenly mixed. If needed, adjust the seasoning by adding more salt, pepper, sugar, or chicken powder.
Meanwhile, try to heat oil in a medium-sized frying pan over medium heat.
Then, transfer the mixture into a medium-sized bowl. Shape it into round balls like meatballs and fry in the warm oil until half-cooked. you need to shape the meatball next to the pan because it will be sticky if you save it in another mixing bowl.
Once half-cooked, take each fried ball out and cut the top but don’t cut through. Fry again until they turn golden brown, pressing the surface to make them bloom. Remove and set aside.
For the sauce, you can blend red curly chili, garlic, and ⅓ cup water until smooth. Pour into the pan and then add 1 cup water, salt, sugar, mushroom powder, and vinegar. Cook until it boils. Add 1 tbsp of cornstarch dissolved in 1 tbsp of water, then cook until it thickens slightly.
You can also use an instant sauce. I have other tips; try to make sauce with sweet soy sauce and add some bird’s eye chillies. that also tastes so good with fried meatballs!
Serve immediately while it is still warm, enjoy!

Fried Meatball
Ingredients
- 12 oz Chicken thigh fillet
- 7 oz Shrimp trim, devein, and wash
- 1 tbsp Fried onion
- 1 Egg
- 1 cup Tapioca Flour
- ¼ cup All-purpose flour
- ⅓ cup Rice flour
- 1 tbsp Sesame oil
- 2 tbsp Baking powder
- ½ tsp Baking soda
- 2 tbsp Oil
- 1 tbsp Chicken powder
- 1 tsp Salt
- ½ tsp Pepper
- ½ tsp Sugar
- 100 gr Ice water and ice cube
Sauce
- 8 curly chili red pepper
- 2 clove Garlic
- 1½ tbsp Sugar
- ½ tsp Salt
- 2 tsp Mushroom Powder
- 1 tsp Vinegar
- 1⅓ cup Water
- 1 tbsp Cornstarch
Instructions

Blend shrimp, chicken thigh fillet, garlic, fried onions, ice water, and ice cubes until smooth.

After they're half-cooked, take each fried ball out and cut the top but don't cut through. Fry again until they turn golden brown, pressing the surface to make them bloom. Remove and set aside.
