If you have a role as a mother, you can understand everything that is a concern for mothers. A mother becomes a food server for the family. Stocking ingredients in the kitchen become a must duty to do as a mother. To be sure, the spices are my must ingredients items in my kitchen. However, the must spice ingredients in the kitchen are garlic and shallot.
Yesterday, I can find onions and garlic. In addition, I stocked up on heavy cream and parmesan cheese because it was to fulfill my son’s pasta lover’s craving. So, when I opened the freezer, it turned out there are chicken thighs left. Actually, I can make taichan satay with garlic and fillet thigh chicken. But, I wanted to make something different. I remember also I have ever made gambas al ajillo, why I don’t create the same typical recipe.
Making Comfort Food with Simple Ingredients
On the same day, I got the news that my father-in-law was sick. My husband said that we have to visit him in the evening. Because of that, I thought the food that my father could enjoy while sick. I thought maybe making soup would make my father-in-law comfortable eating it. But, I reconsider maybe other family members won’t enjoy eating this soup too much. Usually, they will immediately say, “Oops, it seems we are sick. Is there any other food, please?”.
Because of that, I racked my brain to make easy, healthy, delicious, and child-friendly food. That’s all so that all other family members can also eat it together. After a while, I immediately thought about how to make garlic sauce. I once ate it at one of the popular Japanese all-you-can-eat restaurants in my city. That’s delicious. Then, I tried to remember what ingredients need in this garlic sauce. But, I made it creamier with the addition of parmesan cheese and heavy cream. They became a perfect pairing of juicy chicken and creamy sauce.
I don’t know where it came from, but I found it in a Japanese restaurant. I think it is a modification of pollo al ajillo.
Even I found it in a Japanese restaurant here, but I believe this is not from Japan. The sauce was not creamy. This sauce recipe has a more savory taste. That’s why I modify the sauce to become a creamy, delicious, and warm sauce. Plus, I don’t want my parmesan cheese and heavy cream to rot in the kitchen. I have to use both of these ingredients immediately.
Some people may not like the aroma of garlic. But, as I said, garlic is one of the ingredients that become a basic spice in Indonesian cuisine. So, removing it feels like something strange. In addition, its distinctive aroma makes garlic very suitable as a flavoring in this recipe, especially this sauce.
I don’t know why I have thought to make this recipe. It comes to my mind directly. I think this is a modification of Middle Eastern garlic sauce, Indonesian garlic sauce, and Italian white sauce. The combination creates a delicious sauce. Moreover, you can eat juicy chicken. It is a combo delish. My family likes it. I hope you and your family will like it too. Let’s dive in.
The Ingredients of
Creamy Garlic Chicken Thigh
- Chicken Thigh – I use skinless and boneless chicken thighs. It is just preference. My family likes to eat easily. Also, they don’t like the mushy chicken skin. Moreover, if the bone and skin are left, you may adjust the cooking time to make the chicken absorb the spices and seasonings.
- Heavy Cream – it is the main ingredient to give the creamy and thick texture. You can use whipping cream if you have whipping cream instead. Yet, I don’t recommend using half and half both heavy and whipping cream in this recipe. The fat in the sauce will break and spill because of the different fat consistency.
- Parmesan Cheese – for a change, you can use pecorino romano or gana padano cheese. I use this cheese to give more cheese flavor.
- Butter – to thicken the sauce and to give the savory taste.
- Garlic – I use chopped fresh garlic. You can use garlic powder or add garlic powder to boost the flavor.
- Chicken Stock – you can add the essence of the chicken when you boil it and add the chicken stock powder to get the savory and tasty taste.
- Vegetable Oil – to sautee the garlic to get more aroma.
- Seasoning – I use simple seasoning. There are sea salt and black pepper.
- Parsley – for garnish
How to Make
Creamy Garlic Chicken Thigh
In a skillet, heat oil over high heat. Cook chicken thigh until both sides turn golden brown.
Transfer cooked chicken thigh into a bowl set aside.
Melt butter in the same skillet, sauté garlic until fragrant then add chicken stock, sea salt, and black pepper.
Stir until combined then add heavy cream and parmesan cheese.
Stir until the parmesan cheese is melted then add cooked chicken thigh and cook until the sauce thickens. Turn off the heat.
Before serving, garnish the creamy garlic chicken thigh with parsley.

- The chopped garlic has less garlic flavor. If you want a stronger flavor, you can slice the garlic.
- Give space for the chicken on the pan to make the spices absorb the chicken. If the pan is too crowded, the chicken will have a different taste of the spices.
Storing and Reheating
I advised him to separate the chicken and the sauce. However, if you want to store all of it or the rest, make sure to store it in an airtight, tightly closed container. After that, you can store it in the refrigerator.
I actually don’t recommend freezing it because it will crack the sauce when heated. But, that’s up to you. To freeze it you can store it in an airtight container and tightly closed. Exhale as much air as possible.
To reheat, take it out of the fridge just before you serve it. You can heat in the oven, gas stove, or microwave.
To heat up, place the remaining chicken in a skillet or saucepan with the sauce. Cover and heat over low to medium heat until sauce is almost bubbly and chicken is hot. Do not boil the sauce.
