Jump to Recipe Print Recipe

Korean BBQ steak rice bowl with creamy sauce is bold, savory, and incredibly satisfying. Tender slices of marinated steak are pan-seared to perfection, served over fluffy rice, and topped with a spicy, creamy sauce drizzle that ties everything together. I love how the combination of soft, sweet, smoky, spicy, and creamy flavors comes together in one hearty bowl!

Indeed, it’s truly a combination that’s comforting, satisfying, and absolutely crave-worthy. Whether it’s a busy weeknight or a weekend treat, this recipe brings restaurant-quality Korean flavors right into your kitchen. This dish is ideal for anyone craving a hearty, flavorful bowl that’s both satisfying and easy to prepare at home.

When I first started making this Korean BBQ Steak Rice Bowl, the trickiest part was honestly choosing the best cut of beef. It felt confusing because I didn’t want the meat to turn out tough—after all, the BBQ steak is the star of the whole dish. A good rice bowl can only shine if the steak is tender, juicy, and packed with flavor. So I did a little experimenting, and here’s what I learned about picking the right meat for this recipe.

How to Choose the Right Meat for Steak Rice Bowls

Choosing the perfect cut of beef is key to achieving a juicy, flavorful bowl. Tender cuts that cook quickly work best, such as sirloin, ribeye, flank steak (Ideal for its rich flavor and tender texture), or tenderloin. You can try Galbi (short ribs) or brisket (For a more authentic Korean BBQ experience). Then, look for meat with good marbling, which helps keep it juicy and flavorful during cooking. Avoid tougher cuts like chuck or round roast, since they need long cooking times and won’t stay tender in a quick pan-sear. Lastly, aim for steaks around 1–1.5 cm thick so they cook evenly without drying out. Don’t forget to always choose fresh, bright red meat with a firm texture for the best results.

The most important tip? Always slice your beef thinly against the grain after cooking to ensure maximum tenderness.

Why you should make this recipe!

  • Big Flavor, Low Effort – Juicy steak marinated in soy, honey, and garlic gives you that sweet-savory K-BBQ vibe, while the creamy gochujang sauce adds the perfect spicy kick.
  • Weeknight-Friendly – From fridge to table in under 45 minutes. Even a quick 10-minute marinade packs in flavor.
  • Totally Customizable – Not into spice? Dial down the gochujang. Want more greens? Throw in bok choy, broccoli, or kimchi. You can even swap steak for chicken, shrimp, or tofu; your bowl, your rules.
  • Cheaper than Takeout – Skip the restaurant bill but still get that restaurant-quality feel. This bowl looks bougie, but it’s easy on the wallet.
  • Crowd-Pleaser – Tested with family and friends, and it always hits the spot. Perfect for picky eaters and foodies alike.

Ingredients of Korean BBQ Steak Rice Bowl

Marinate Steak

Korean BBQ steak rice bowl with creamy sauce is bold, savory, and incredibly satisfying. Tender slices of marinated steak are pan-seared to perfection!
  • Sirloin Steak: Perfect cut for Korean BBQ that absorbs marinade beautifully and cooks quickly. Choose between flank, skirt, or New York strip for the best texture and flavor. This is the star of the show! Thinly sliced, it cooks quickly and absorbs all those delicious marinade flavors.
  • Soy Sauce: Creates a savory umami base for an authentic Korean marinade
  • Honey or brown sugar: Adds sweetness and helps caramelize meat for delicious charred edges. I use honey here
  • Sesame Oil: Provides a distinctive nutty flavor essential to Korean cuisine
  • Garlic: Fresh garlic delivers maximum flavor impact for steak
  • Ginger grated: Ginger adds a slight heat and freshness, balancing the sweetness and saltiness in the marinade. It also helps tenderize the steak slightly.

Spicy Creamy Sauce

  • Mayonnaise:  The creamy base of the sauce. It gives a rich texture that pairs beautifully with the spicy elements.
  • Gochujang: Korean chili paste that brings heat and depth
  • Honey: Balances gochujang heat with natural sweetness
  • Sesame Oil: Provides a distinctive nutty flavor essential to Korean cuisine

Serving

  • Cooked Rice: White, brown, or jasmine rice will soak up all that lovely sauce. While white rice is a classic choice, feel free to use brown or jasmine rice for a nutty flavor and aromatic experience.
  • Sesame Seeds garnish: Provides nutty crunch and visual appeal
  • Green Onion garnish: Adds fresh bite and beautiful color contrast

How to Make Korean BBQ Steak Rice Bowl

Korean BBQ steak rice bowl with creamy sauce is bold, savory, and incredibly satisfying. Tender slices of marinated steak are pan-seared to perfection!

Start by combining all the marinade ingredients – soy sauce, honey (or brown sugar), sesame oil, garlic, and grated ginger – in a small bowl. Coat the sirloin steak thoroughly with the mixture, making sure every side absorbs the flavors. Let the steak marinate for at least 30 minutes to deepen the taste and tenderize the meat. For extra flavor, marinate in the refrigerator for up to 2 hours.

While the steak marinates, mix all the spicy creamy sauce, then whisk until smooth and well combined, then set aside. This sauce will add a rich, spicy, and slightly sweet kick to your rice bowl.

Then, heat a pan over medium-high heat. Before cooking, remove the garlic and ginger from the steak to prevent burning. Sear the steak for 2–4 minutes on each side, depending on thickness and your preferred doneness (2–3 minutes for medium-rare). Flip carefully to get a perfect caramelized crust.

Once cooked, transfer the steak to a cutting board and let it rest for 5 minutes. Resting helps the juices redistribute, keeping the steak juicy. Then slice the steak thinly against the grain for maximum tenderness.

Assemble the Rice Bowl

Start by adding a generous scoop of steamed rice to each serving bowl. Top the rice with the sliced steak, arranging it neatly for presentation.

Next, drizzle the spicy creamy sauce generously over the steak. Finally, garnish with sliced green onions and toasted sesame seeds for color, texture, and an extra burst of flavor.

Serve and Enjoy

Serve immediately while warm. Each bite combines juicy, tender steak, fluffy rice, and creamy, spicy sauce – a perfect balance of flavors in every mouthful. A side of kimchi adds a nice fermented tang that balances the sweet and spicy flavors of the steak. Alternatively, sautéed spinach or roasted eggplant makes for an excellent accompaniment. Optional: Add fresh cucumber, shredded carrot, or kimchi on the side to brighten up your bowl and add extra crunch.
