In Bahasa Indonesia, “dimsum goreng lumer” literally means “melting fried dim sum.” Melted for context cheese here, and that’s exactly what you get — crispy fried dumplings with savory filling, oozing cheesy goodness inside. Usually stuffed with a mix of seasoned ground chicken or shrimp and a chunk (or dollop!) of melty cheese, these dumplings get deep-fried to golden perfection.

Don’t worry, I make the sauce recipe too and it’s way too simple, or you can use the store-bought sauce too and that’s still delish!

Making your own Melted Cheese Fried Dumplings or Dimsum Goreng Lumer at home is easier than it looks. With dumpling wrappers, a savory filling, and your favorite melty cheese, you’re just a few steps away from crispy, gooey goodness.

Dumpling

  • Protein I use: Chicken Thigh Fillets and Shrimp. Chicken thighs are used for their higher fat content compared to breast meat, making the dumpling filling juicier and more flavorful. Also, Shrimp adds sweetness, bounce, and a slightly firm texture to the filling.
  • Tapioca Flour acts as a binding agent and gives the filling a slightly chewy and smooth texture. It helps hold the protein and other ingredients together while improving elasticity.
  • Egg White helps bind the filling, giving it a cohesive texture while maintaining a light consistency. It also contributes to the bounciness of the meat mixture when cooked.
  • Garlic adds aromatic depth and a subtle spiciness to the filling, balancing out the richness of the meat and cheese.
  • Seasoning uses Sesame Oil, Oyster Sauce, Salt, Chicken Stock Powder, and Pepper. Adjust with your preference, do not forget to taste before wrapping the dimsum
  • Quick Melt Cheddar Cheese: as a cheese core, use quick melt cheese to provide melting or lumer one. This is the melty, gooey core of the dumpling. Quick-melt cheddar melts easily during frying, creating the signature “lumer” (melting) effect when bitten into. It adds richness, saltiness, and indulgence.
  • 8 sheet Spring Rolls: This is used as a wrapper for dumplings. I use spring rolls, so the dumplings will be crispy. providing contrast to the soft interior. Thinner than dumpling wrappers, spring roll skins make the outer texture crunchier.

Chili Sauce

  • Red Chili: Gives the sauce a base of mild heat and vibrant red color. It adds flavor without overwhelming spiciness.
  •  Bird’s Eye Chili. These are very spicy and provide the fiery heat characteristic of Indonesian-style chili sauces. You can adjust the amount to control spiciness.
  • Garlic enhances aroma
  • Chili Sauce, serves as the base of the sauce, giving it sweetness, tang, and thickness. It ties the chilies, garlic, and spices together into a cohesive flavor.
  • Seasoning Water, Sugar, Chicken Stock Powder, Salt, and Pepper
  • Cooking oil to sauté the aromatics and help blend the flavors of the chili sauce, giving it a slightly glossy, finished texture. Also, to fry the fried dimsum

How to Make Melted Cheese Fried Dumplings

Dumpling

Let’s start!

In a food processor, combine chicken thigh fillet and shrimp. Blend until smooth. Then, add tapioca flour, egg white, minced garlic, sesame oil, oyster sauce, salt, chicken stock powder, and pepper into the processor. Blend again on high speed until the mixture becomes sticky, fluffy, and well combined.

Now, transfer the paste into a piping bag for easier assembly. Then, divide the quick-melt cheddar cheese into 8 equal portions.

Next, in a small bowl, mix 1 tsp flour with 1 tbsp water to create a sealing paste.

It’s time to assemble the Dumplings

First, lay out a spring roll wrapper on a clean surface. Pipe a small square of the chicken-shrimp paste onto the center. Next, place a piece of cheese in the middle, then pipe more paste on top until the cheese is fully enclosed.

Then, brush the top corner of the wrapper with the flour-water mixture. And fold the bottom and top corners inward over the filling. Fold the right and left corners to the center, forming a compact pouch.

Last step, seal the folds with more flour mixture to hold everything in place. Repeat for the remaining wrappers.

Now, heat cooking oil in a pan over low heat. Fry the dumplings until fully cooked and both sides are golden brown and crispy.

Finally, remove and place them on a cooling rack to drain excess oil

Chili Sauce

Crush red chili, bird’s eye chili, and garlic with a hand blender, then heat cooking oil in a pan over medium heat, then cook the chili mixture for about minutes.

Add the rest of the chili sauce ingredients and cook for another 5 minutes. Place it in a small bowl and serve it with fried dumplings.

Storage and Reheating

To store: Let leftover dumplings cool completely, then store in an airtight container in the fridge for up to 2 days.
To reheat: Re-fry in a bit of oil or bake at 180°C (350°F) until hot and crispy again. Avoid microwaving—this makes the wrapper soggy and the cheese rubbery.

Dumpling

  • 1 lb Chicken Thighs Fillet
  • 100 g Shrimp
  • ⅓ cup Tapioca Flour
  • 1 Egg White
  • 2 cloves Garlic
  • 1 tbsp Sesame Oil
  • 1 tbsp Oyster Sauce
  • ½ tsp Salt
  • ½ tsp Chicken Stock Powder
  • ¼ tsp Pepper
  • ½ block Quick Melt Cheddar Cheese
  • 8 sheet Spring Rolls

Chili Sauce

  • 1 Red Chili
  • 3 Bird's Eye Chili
  • 2 clove Garlic
  • ⅓ cup Chili Sauce
  • ½ cup Water
  • ½ tbsp Sugar
  • ¼ tsp Chicken Stock Powder
  • ¼ tsp Salt
  • ¼ tsp Pepper
  • Cooking Oil

Instructions

Dumpling

  1. Using a food processor, blend chicken with shrimp.

  2. Add tapioca flour, egg white, garlic, sesame oil, oyster sauce, salt, chicken stock powder, and pepper and mixing again on a high speed until well combine into a sticky and fluffy paste.

  3. Transfer the mixture to a piping bag.

  4. Divide cheese into 8. Make flour mixture: combine 1 tsp flour and 1 tbsp water on a small bowl. Set aside.

  5. Lay spring roll on working surface, pipe square the batter then place cheese on top of it and pipe again until the cheese is fully covered.

  6. Apply the mixture of flour and water to the top corner to seal. Fold the up and down corners up over the filling.

  7. Fold the right and left corners to the center then brush with flour mixture. Repeat this step until finished.

  8. Heat oil in a pan over low heat then fry the dumplings until completely cooked and both sides are golden.

  9. Remove from the heat and rest it on a cooling rack.

Chili Sauce

  1. Crush red chili, bird's eye chili, and garlic with a hand blender then heat cooking oil in a pan over medium heat then cook the chili mixture for about minutes.
