  • Chicken Breast, boneless and skinless; Lean and high in protein, chicken breast provides structure and firmness. It creates a smooth base when blended, which is essential for that classic sausage texture.
  • Chicken Thigh; has more fat than breast, which adds juiciness and flavor. The fat helps emulsify the mixture and prevents the frankfurters from being dry.
  • Egg White helps all ingredients stick together. It also improves the bouncy texture typical of sausages.
  • Cornstarch; gives that “snap” when biting into the cooked sausage. It also contributes to the signature smooth, elastic bite.
  • Baking Powder Double Active; baking powder creates lightness and slight aeration, which gives a soft, bouncy bite to the frankfurter when steamed or cooked
  • Seasoning, Frankfurter, I use store-bought Frankfurter seasoning here, so my sausage looks orangish
  • Paprika Powder, Onion Powder, Garlic Powder, Salt, Sugar, Ground Black Pepper
  • Ice Water: Use ice or cold water to help bind the mixture.
  • Quick Melt Cheddar Cheese cubed; cut into small cubes or sticks. The star filling! These cheese cubes melt inside the sausage, creating that gooey, cheesy center when cooked. Quick-melt cheese ensures even melting and a creamy bite.
  • Collagen Sausage Casing 18 cm is the equipment for making homemade sausage. They’re edible, sturdy, and hold their shape during cooking
  • Additionally, you will need a Food processor or blender, a Steamer or large pot, a machine for inserting sausage into collagen case, and some rope to tie one sausage to another, or you can just tie manually using collagen

How to Make Homemade Chicken Cheese Frankfurter

First, cut the chicken breast and chicken thigh into small chunks. Using a food processor, grind the meat until smooth and slightly sticky. This will be the base of your frankfurter.

Second, blend in the seasoning to the ground chicken in the food processor, add the following: egg white, cornstarch, baking powder, frankfurter seasoning, paprika powder, onion powder, garlic powder, salt, sugar, black pepper, and ice water. Blend again until everything is well incorporated and the texture becomes a thick, smooth paste. Scrape down the sides as needed  

Tip: Keep the mixture cold throughout the process to prevent it from breaking or becoming greasy.

Third, fold in the cheese. Transfer the chicken mixture into a mixing bowl. Add the cubed quick melt cheddar cheese, then gently stir with a spatula or gloved hands until the cheese is evenly distributed.

Fourth, spoon the mixture into a piping bag or sausage stuffer. Carefully fill the collagen sausage casing, pressing gently to remove air pockets. Once filled, twist and tie the sausages every 10 cm using kitchen twine or your fingers to portion them evenly.

Fifth, cook the sausages. Bring a pot of water to a gentle boil over medium heat. Add the sausages and boil until they expand and float, which usually takes about 5-10 minutes. This indicates that they are cooked through.

Sixth, remove and cool. Take the sausages out of the water and let them cool slightly. They’re now ready to eat, or can be stored for later.

Seventh, enjoy your homemade chicken cheese frankfurters as is, or pan-fry them for a golden outer crust.

  • Don’t Overprocess the Meat. You want a smooth, sticky paste, but be careful not to overblend the chicken. If you grind it too much, it could turn mushy or lose its sausage-like texture.
  • Use Quick Melt Cheese. The quick melt cheddar is a fantastic choice because it melts evenly and gives a rich, gooey center without separating when cooked.
  • Also, don’t overcrowd the pot. Cook in batches if necessary to allow each sausage to expand and cook evenly.

Storage & Freezing Tips for Homemade Chicken Cheese Frankfurter

  • Fresh Sausages: Once your sausages are cooked and cooled, they can be stored in the refrigerator for up to 4 days. Storage Tips: Place them in an airtight container or wrap them tightly in plastic wrap or wax paper to prevent moisture loss and contamination. For best results, keep them in a sealed zip-lock bag to avoid any lingering odors in the fridge.
  • Freezing the Sausages: If you’ve made a big batch or want to have sausages on hand for later, freezing is a great option. Place the tray in the freezer for about 2–3 hours or until they’re solid. Once frozen, transfer the sausages into a freezer-safe airtight bag or vacuum-sealed bag for long-term storage. Homemade chicken cheese frankfurters can be stored in the freezer for up to 1 month.
  • Thawing and Reheating: To thaw frozen sausages, move them from the freezer to the fridge and let them thaw overnight. Once thawed, you can either steam, pan-fry, or grill the sausages until heated through.

How to Tell If They’re Spoiled: check for any signs of spoilage, such as Off smells or a sour aroma, changes in texture, such as being slimy or excessively dry, or discoloration in the sausage or casing. If any of these signs are present, it’s best to discard the sausages.

Ingredients

  • 380 g Chicken Breast boneless and skinless
  • 280 g Chicken Thigh
  • 1 Egg White
  • ½ cup Cornstarch
  • 2 tsp Baking Powder Double Active
  • 1 tbsp Frankfurter
  • 1 tbsp Paprika Powder
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1 tbsp Salt
  • 1 tbsp Sugar
  • 1 tsp Ground Black Pepper
  • 190 g Ice Water
  • 150 g Quick Melt Cheddar Cheese cubed
  • 1 m Collagen Sausage Casing 18 cm

Instructions

  1. Ground chicken thighs and breast using a food processor then add the rest of the ingredients except cheese until smooth and well combined.

  2. Place the sausage mixture into a mixing bowl then add cubed cheddar cheese, stir until well mixed.

  3. Transfer the mixture into a piping bag or sausage filler and fill the sausage casing with the mixture nice and slowly. Once the casing is filled, tie about 10 cm long for each sausage.

  4. Heat water in a pan over medium heat and boil the sausage until it expands and cooks evenly. When the sausage floats, remove from the pan.

  5. You can eat the sausage right away or fried it and store the rest in the freezer for up to a month. Enjoy!
