Ingredients of Knafeh Pistachio Chocolate Bar
- Milk Chocolate Couverture: This is high-quality chocolate specifically designed for melting and molding. Couverture chocolate has a higher cocoa butter content, resulting in a smoother and shinier finish. I use the dark chocolate with 60% chocolate. Dark chocolate with a cocoa content of 50-70% offers a balance between sweetness and bitterness.
- Kataifi or Shredded Phyllo Pastry: Kataifi is a type of pastry made from very thin sheets of dough that are shredded into fine strands. It’s a key ingredient in many Middle Eastern desserts, including knaffeh. Adds a crunchy texture and additional nuttiness to the filling. It also provides contrast to the smoothness of the pistachio spread
- Unsalted Butter: Butter adds richness and flavor to the crispy knafeh layer. Unsalted butter also gives you better control over the final saltiness of the dessert.
- Pistachio Cream: This is a creamy, rich paste made from pistachios. It provides the dessert with its characteristic pistachio flavor. Adds a creamy and nutty flavor to the filling of the chocolate bar. However, while pistachio spread adds a unique flavor to the filling, you can experiment with other nut spreads or fillings if desired such as Hazelnut
- Tahini: Tahini is a paste made from ground sesame seeds. It adds a nutty and slightly bitter flavor that complements the sweetness of the pistachio cream. They complement each other
How To Make Knafeh Pistachio Chocolate Bar
Preparing the Knafeh Pistachio Filling
Begin by coarsely chopping the kataifi pastry and setting it aside. Second, Melt the unsalted butter in a medium-heat pan. Once melted, add the chopped kataifi and toast for approximately 10 minutes, or until it achieves a crispy and golden brown hue. Then, transfer the toasted knafeh to a mixing bowl for the next step.
Next, incorporate the pistachio cream and tahini into the toasted knafeh. Stir thoroughly to ensure a homogenous mixture. This mixture will serve as an indulgent filling for your chocolate bars.
Tempering the Chocolate
The first thing to do is fill a saucepan halfway with water and bring it to a gentle simmer over medium heat.
Second, place about two-thirds of the milk chocolate couverture in a heatproof bowl. Using the double boiler method, gently melt the chocolate until it reaches a temperature of 100°F (38°C). It is crucial to avoid exceeding 115°F (46°C) to prevent the chocolate from seizing.
Once the chocolate has melted and reached the desired temperature, remove it from the water bath. Now, Introduce the remaining unmelted chocolate chips to the melted chocolate and stir continuously until the mixture cools down to 84°F (29°C). This process is called tempering and ensures a smooth, shiny, and crisp finish for your chocolate bars.
Assembling the Knafeh Pistachio chocolate bar
Let’s pour approximately two tablespoons of the tempered chocolate into each heart-shaped mold. Tilt the mold gently to ensure an even coating of the interior.
start with place the molds in the refrigerator for about 10 minutes to allow the chocolate to set.
Once the chocolate base has solidified, generously fill each mold with the prepared knafeh pistachio mixture.
Then, pour additional tempered chocolate over the filling, ensuring complete coverage. Return the filled molds to the refrigerator for at least an hour to allow the chocolate to fully set.
Last step garnish! Carefully remove the hardened chocolate bars from the molds. For an extra touch, drizzle with additional melted chocolate or other desired toppings. Serve immediately or store in a cool, dry place.
