What are crookies?
Le Crookies is a combination of a croissant and cookie dough that is baked together. You could use fresh croissants or a day-old will work too, slice them in half, open them up, stuff them with buttery chocolate chip cookie dough, and bake until lightly golden, flakey, and just done.
The original comes from the Boulangerie Louvard in Rue de Châteaudun in Paris and has since become an internet hype. In the French bakery, the cookie croissant costs between five and seven euros.

Ingredients of Cookie Croissant (Crookies)
Chocolate Chips Cookie
- Salted Butter; In this case, simply use room-temperature butter. If you use normal butter, I would recommend browning it. Provides richness, flavor, and moisture to the cookie dough. It also helps create a tender texture in the baked cookie.
- Sugar; for sweetness, Sweetens the cookie and helps to create a crisp exterior while contributing to browning during baking.
- Light Brown Sugar; Use a mix of brown and white sugar for cookie perfection! Brown sugar adds a warm, caramel-like flavor and plenty of moisture. The granulated sugar adds the perfect amount of extra sweetness. It also aids in creating a softer texture compared to granulated sugar
- Egg; These will bind the ingredients and provide structure and richness. Adds moisture, richness, and structure to the cookie dough. It helps bind the ingredients together and contributes to the cookie’s chewiness and tenderness.
- Vanilla Extract; for flavour. A concentrated liquid flavored with vanilla beans. It enhances and complements other flavors in the recipe.
- Flour; I use all-purpose flour, All-purpose flour will yield the best texture.
- Baking Soda; is used as a leavening agent. it causes the cookie to rise and spread during baking. It also reacts with acidic ingredients (such as brown sugar) to produce carbon dioxide, which helps create a softer texture.
- Dark Chocolate Chips; Semi-sweet chocolate chips are best because they won’t overwhelm the other flavors. However, milk chocolate chips or even dark chocolate chips will work. Adds depth of flavor, richness, and texture to the cookie. It melts during baking, creating pockets of gooey chocolate throughout the cookie and providing bursts of intense chocolate flavor.
Other
- Croissant; You’ll need 5 butter croissants, without fillings such as jam or cream. The filling is gonna be chocolate chip cookie dough. You can get packaged croissants from the grocery store or from a bakery, I recommend bakery-style croissants because they taste better. I bought it from a café in my city.
- Sea Salt optional; This is for garnish, I think adding sea salt as garnish is really balancing all the flavor taste. However, feel free to add or omit it based on your preference! A sprinkle adds a salty contrast that can enhance the sweetness of the cookie and chocolate.
Let’s Make Cookie Croissant (Crookies)
First, grab your saucepan and melt the butter over low heat. You’ll hear it sizzle and bubble as the water content evaporates.
Keep an eye on it! Once the sizzling subsides and the moisture is gone, wait another 1-2 minutes. You’re looking for the milk solids in the butter to turn a beautiful brown color.
Pro-tip: Don’t walk away! Burnt butter is not what we’re after here.
Once the butter is browned and fragrant, transfer it to a heatproof mixing bowl. Let it cool slightly while you prepare the other ingredients.
Add both the white and brown sugar to the cooled butter and whisk them together until well combined.
Now, crack in your egg and add the vanilla extract. Give it another good whisk to incorporate everything.
In a separate bowl, whisk together the flour and baking soda. This ensures they’re evenly distributed.
Gradually add the dry ingredients to the wet ingredients in your mixing bowl. Stir until just combined – don’t overmix!
Fold in ⅓ cup of your chocolate chips. We’ll save some for topping later.
Fill the Croissant
Now for the fun part! Slice your croissants in half. Take about 2 tablespoons of cookie dough and gently flatten it out. Place this inside each croissant half.
Sprinkle in some more chocolate chips and then close the croissant gently.
On the top of each assembled Crookie, dollop another 2 tablespoons of cookie dough. Press a few more chocolate chips onto the top for an extra melty, delicious look.
Preheat your oven to 350°F (175°C). While it’s heating up, arrange your Le Crookies on a baking sheet.
Bake them for 12 minutes, or until they’re golden brown and the cookie dough is set. If you want half-baked oey gooey, you can bake for 8-9 minutes
Take them out of the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Once cool, sprinkle a touch of sea salt over each Crookie for a delightful sweet and salty contrast.
Now, enjoy your delicious homemade Le Crookie creation!
