Have you heard about those trendy twisty pastries called Supreme Croissant from Lafayette Grand Cafe and Bakery in NYC? They’re like croissants but with a cool spiral-rounded shape, filled with creamy goodness, and topped with yummy stuff! Even though I haven’t tried them, people are buzzing about how amazing they are.
The chefs at Lafayette, Scott Cioe and James Belisle, wanted to make a different kind of chocolate croissant, and after a bunch of tries, they came up with this awesome version. It looks fantastic!
Now, let’s talk about the Lafayette croissants – these are not your regular croissants. They’re round and made by the Lafayette Bakery in New York. They come with all sorts of fillings and creams. But later, this combination of the newest revolution croissants is more familiar with New York Roll since it is from an NYC café. This cool creation gained popularity in the 2020s but the trend was happening and coming up to social media until last year.
Switching to the New York Roll. It’s an easy way to bring a taste of New York into your kitchen. Just follow a few steps, and you’ll have these delicious bread rolls. They’re not just tasty; they go well with many dishes. The dough is light and fluffy, rising to a golden brown in the oven, and we top them off with crunchy crumble chopped nuts.

Ingredients of New York Roll
- Danish Pastry; Danish pastry is a rich and laminated dough that becomes flaky when baked, creating layers that contribute to the pastry’s texture and flavor. This is the main actor for making the New York roll, but you will need to do proofing for at least 1 hour. You can create original pastry, but this time, I make an instant passway
- Dark chocolate chips; as filling inside the Danish pastry. When the pastry is baked, the chocolate chips will melt and create pockets of gooey, decadent chocolate
- Butter; Butter is a key ingredient in pastry making, contributing to the flakiness and flavor
- Whipped cream; adds moisture and richness to the filling
- Chopped nut; as topping and edge of New York rolls. Chopped nuts, such as almonds or walnuts, provide a crunchy texture and a nutty flavor. They add contrast to the soft and flaky pastry, enhancing the overall sensory experience
- Egg; . It’s often used for egg wash, which is brushed on the surface of the pastry before baking to create a golden-brown crust.
- Milk; for making ganache and mixed with dark chocolate chip
How To Make New York Roll
First thing first, Prepare a baking tray and line it with baking paper. Then, arrange the ring cutter on top of it. Next, Combine 2 sheets of Danish pastry by lightly moistening and sticking them with a little water, and pressing them together at the connecting edges. Roll from the top to the bottom. Then, trim the right and left edges to tidy them up.
Then, Cut it into 5 pieces, then arrange them with the ring cutter. Proof for 1.5 hours.
While waiting for proofing nearly finish, Preheat the oven to 200°C (392°F)
For the egg wash: mix the egg and milk. Then apply it to the surface of the dough.
Place another baking tray on top and bake at 200°C (392°F) for 20 minutes. Once cooked, let it sit for a while.
For the filling: melt ¾ cup chocolate with whipping cream using the double boiler technique, then let it cool to room temperature. After that, inject it into the croissant using a syringe and piping bag.
For the Top Coating a.k.a ganache: melt ¼ cup chocolate compound with a little butter. Then, dip the top surface and decorate it with chopped nuts.
Ready to be served! Roll your mouth with this ooey gooey New York roll, butter pastry blown with chocolate filling and crunchy chopped nut.
