Halloween is over, but there’s still a lot of pumpkins left in my kitchen. Halloween always leaves a lot of pumpkins. Moreover, this fall is the season for pumpkin. Wouldn’t it be better to take benefit of this many stocks of pumpkins this season?
I think, instead of throwing away good pumpkins in my kitchen, I better make them into a delicious sweet snack to treat my family with more food on Thanksgiving. In my childhood thinking, thanksgiving is always about food, family, and more food.
There is a taste of certain memory in pumpkin spice
I remember a moment when I made this pumpkin bread with my grandma. The bread uses a mashed pumpkin or pumpkin puree as additional ingredients. My grandma and my mom are my favorite chefs in the world.
I still remember my childhood memories with my grandma. She loves to make snacks for her grandchildren, especially during Thanksgiving. She always served a lot of food on the table. One of the snacks I like is this pumpkin bread.
In my old days, I shared the bread and ate it together with my sisters and cousin. Then, we played with the bread on our hands. This bread tasted light, sweet, soft, and moist. We really loved it. I’m sure no one kid can deny this sweet bread!
Grandma’s pumpkin roll breads
My grandma made the bread in pumpkin season. She made it in fall or autumn and after Halloween in November. Grandma made several kinds of food using pumpkin. One of the pumpkin foods she made is pumpkin dinner bread rolls.
Grandma always took her grandchildren to cook or bake something. It may be the reason why my sisters and I love cooking and baking. I think all of the family members are cooking lovers.
One day when I was seven years old, my grandma invited me to help her. It was my first time to help grandma made pumpkin roll bread. My sisters also came to help grandma. We were so happy if we could help our grandma.
Actually, I wasn’t helpful enough at that time because I was still a kid. I might help with a few easy and basic processes. Every time I imagine it, I can smell the bread aroma around me.

The Ingredients of Pumpkin Dinner Bread Rolls
Here is all what you need to make Pumpkin Dinner Bread Rolls:
- Pumpkin: You need to bake and mash the pumpkin. I use real pumpkin to make pumpkin puree for both flavor and moisture. You can also use canned pumpkin puree. Yet, I want something traditional like my grandma did.
- Bread Flour and Instant Dry yeast: These are the main ingredients to make bread. Pay attention to use these ingredients because these ingredients determine the result of bread. As a result, good bread comes out light, puffy, and not at all dense.
- Milk: The addition of milk to the bread-making process aims to increase nutrition in bread. Also, it will give off a fragrant aroma during the baking process. It also makes the texture of the breadcrumbs softer.
- Eggs room temperature and an egg wash: Eggs will improve the nutritional value of bread, increase delicious taste, and help to form a smoother bread fiber texture. The lecithin content in egg yolks helps emulsify the dough so that the dough structure is more compact. You have to choose chicken eggs that are new, not cracked, and clean. You better crack the eggs in a separate bowl. It is to avoid rotten eggs mix directly to the dough.
- Butter: Butter itself has at least 80% fat content. Butter provides the function of flavoring, softening, and expanding bread and reducing the gluten effect of flour.
- Salt and Granulated Sugar: Salt provides aroma and taste, regulates fermentation levels, strengthens gluten (a flour protein that plays a role in the texture of bread), and gives color to the inside of the bread. Meanwhile, sugar, besides providing a sweet taste, is also a food source for yeast and gives color to the outer skin of the bread. Using too much sugar will make the bread texture rough or cramped and the surface burnt.
- Mix-ins: You can add almonds, pecans or walnuts, or maybe an optional jam. You can also add half a cup of sweetened dry chocolate chips or cranberries. Add a tablespoon of grated fresh ginger if you want the ginger flavor to the bread. Make sure you put it in the dough before baking it.
How to Make Pumpkin Dinner Bread Rolls
Firstly, you need to make a Pumpkin puree by yourself. Cut the pumpkin, don’t forget to scrape out the seeds and stringy insides. Next, wrap the pumpkin with aluminum foil to prevent the pumpkin from drying out in the baking process.
Secondly, bake the pumpkin at 347°F for 45 minutes.
After the pumpkin is baked, mashed the pumpkin with a fork. Set aside.
Fourthly, combine milk with egg and dry yeast in a bowl.
Mix thoroughly with a mixer with the bread paddle attachment, then add flour and sugar then mix thoroughly again.
Last add butter, mashed pumpkin, and salt then mix until the dough is not too tacky and the sides of the dough no longer sticking to the bowl when mixing. Cover with a clean kitchen towel.
You can try your first proof when it has been 45 minutes or until doubled.
If the dough is good enough, make the rolls of the dough. The portion in each dinner roll is 36g.
Spread the dough on a silicone dough mat, then roll it and shape it into a smooth ball.
Put 16 smooth dinner rolls on an 8-inch x 8-inch baking square pan. You can make 2 batches of dinner rolls in 2 baking square pans.
Second proof, you need to leave it for 15-30 minutes. Cover it with a clean kitchen towel.
After second proof, open the kitchen towel. Egg wash the dinner rolls before you bake it.
Bake the dinner rolls at 302°F at the lower rack for 20 minutes, so the top of the dinner rolls will not burn.
