A bit story about cheesecake ice cream
That afternoon at home, accompanied by 90s songs. The day where all the stories from 5 years ago appeared in the memory vaguely. That afternoon, in Kota Tua, Jakarta, there was an old-looking shop that was still opening. Because it was rain, I came to the cafe.
“Good afternoon, welcome to Kedai Batavia. This is our mainstay menu,” said a waiter who came as soon as my mother. So that the shop is indeed the oldest in Kota Tua, Jakarta. The unique thing is that although the menus in the shop have many Indonesian menus. Apparently, they have slipped some western menus. The waiter said that it was an idea to compete with modern cafes around the Old City of Jakarta.
“I’m confused, can you help the mainstay menu here?” – I asked.
“Can you, if for the Indonesian menu we have Ketoprak Jakarta, there is Semarang fried rice, there is also a grilled chicken menu. To drink, there is mixed ice, orange ice” – answered the female waitress who was still faithfully standing at the edge of our table.
“What about the western menu?”
“For the western menu, sorry, we only have 2 menus, there are spaghetti and steak”
Mother immediately ordered the grilled chicken menu because she was very hungry. Meanwhile, I was confused about which menu to choose because I was still full.
“Or if you’re still full, we have a new menu too. There is traditional cake and there is Blueberry cheesecake ice cream”
Wow, my mind is quite focused on the last menu the tavern waiter mentioned. I immediately without thinking choose to order Blue Berry Cheesecake Ice Cream. Which I think is enough to wait for the rain to stop. While the order came, I was immediately curious to surf the internet about blueberry cheesecake ice cream.
After I served it on the internet, I don’t believe that blueberry has many benefits
Based on the internet, the content of blueberry cheesecake ice cream which is about 100 ml has about 120 calories. If you eat this at night it will definitely make you fat, I thought to myself. However, it turns out that there are many benefits of blueberries, namely:
- Maintain heart health
- Maintain mental and brain health
- Prevent premature aging
- Reduces the risk of cancer
- Control blood sugar
- Reduce inflammation
So I think these benefits far outweigh the calories that can make you gain weight. After 5 minutes finally, the Blueberry ice cream that I was waiting for came. It really tempts the appetite to immediately finish it.
But of course, it would be a shame if I just wasted food as tempting as this. The first bite that enters the mouth is really fresh, cold, and sweet on the tongue. The ice cream, the fresh blueberries, and the sweetness of the cheesecake I really chewed slowly so that all the dots on my tongue tasted it. Memories of such a simple place and time are reminded by an ice cream menu that is so delicious. The next day, I finally married the man of my dreams, my last day being my mother’s daughter was spent alone chatting with my mother in an old shop in Kota Tua Jakarta and the menu of Blueberry cheesecake ice cream was very sweet.
Therefore, today I intend to remake Blueberry cheesecake ice cream for my son, to return to the fond memories of 5 years ago at that time.
Ingredients of
Blueberry Cheesecake Ice Cream
- Frozen Blueberries and Blueberry Preserved – For blueberries, you can use them on your own. If you like fresh blueberry, you can use it also.
- Granulated Sugar – I use granulated sugar here to make them mix well in the ice cream. Also, I don’t use too much sugar because want to expose the taste of blueberry and cheese here. Yet, I think, this recipe is sweet enough. Or, if you use lime juice, it will reduce a bit of sweetness in this recipe.
- Cream Cheese – Use it at room temperature. The creamy texture and tangy flavor will make this cheesecake truly become lovely cheesecake.
- Whole Milk – To give fat content in this ice cream. It is to give more liquid creaminess.
- Heavy Cream – It will give the ice cream texture softer and creamy. It lightens the mixture also.
- Fine Sea Salt – Not only sweet but also savory, this ice cream has flavorful taste.
- Vanilla Extract – This vanilla will enhance the delicioous smell of this ice cream.
- Graham Crackers – I chopped them. This crumb will add the texture and taste. If you don’t like it, you can skip it.
How to Make
Blueberry Cheesecake Ice Cream
In a pan cook frozen blueberry & ¼ cup blueberry preserved over medium heat. Cook until blueberry is soft & the water from blueberry has reduced. The consistency is quite thick.
Turn off the heat. Set aside & put it in a bowl. Let cool for 15 minutes then save it in a fridge.
In the bowl of a blender or food processor, puree the remaining ice cream ingredients except for the graham crackers until smooth. Transfer to a medium bowl and press plastic wrap against the surface. Chill in the refrigerator for at least 30 minutes, or up to 1 day.
Pour the mixture into an ice cream maker. Freeze according to the manufacturer’s directions. During the 5 last minutes of freezing, gradually add the blueberry mixture and graham crackers.
Transfer the ice cream to an airtight container, press plastic wrap against the ice cream, and freeze until firm and flavor are ripened for at least 2 hours.
Recipe Notes
- If you use fresh blueberries, look for plump blueberries with skin that isn’t mushy. Also, choose blueberries that the color are full blue or dark purple.
- If you use vanilla extract, make sure not to add too much, because it will make the taste bitter and the texture hard.
- You can add lime juice if you like more tartness in the ice cream. Yet, I think this blueberry is sour enough.
- You can use this Graham Cracker as a mixture or you can make it a sandwich to eat it.
Do you have other fruits ideas on your head? Try it!
I tried mango and strawberry also. It goes super well. Also, I like to give the chunk of the fruits still in the ice cream to give more a bit of hard texture in the ice cream beside the graham crackers.
Besides the graham crackers, you can also use other biscuits or cookies that suit well with the ice cream.
If you want to store it in the freezer, I suggest you use an airtight container or use plastic wrap. It is to prevent the ice crystal because ice crystal makes the ice cream not smooth as the first texture.
