Boba pearl or tapioca pearl is made from cassava root starch, sugar, black food coloring, and water. Then it’s shaped into sphere. Sometimes people use another words for example boba, pearl, or bubble. Originally people use boba pearl in milk tea, which is originated from Taiwan. They usually call it bubble tea. But nowadays people use more varied drinks such as coffee milk, chocolate milk, taro, and matcha (green tea).

Although we most of the time find the boba pearl with milk tea, for this recipe my sisters and I use coffee and milk as based. Then we add homemade palm sugar syrup for the sweetener. How to make palm sugar syrup is very easy. We only add palm sugar and water on saucepan with low heat. And then we cook it until sugar is dissolved and the texture is syrupy.

For boba pearl, you can use the raw one. Cook raw boba pearl according to package direction. However sometime people use ready to eat boba pearl for convenience. You can find it in asian section in supermarket or asian store.

Palm sugar we use in this recipe is in a block form. It’s commonly used in Indonesia. But if you can’t find it you can use palm sugar in any form of you choice. Apart from sweetness, palm sugar give the drinks more caramelly and coconut flavors. Therefore you will find unique taste in this drink.

Boba Pearl Coffee Milk

Ingredients

  • 120 ml Espresso
  • 50 g Palm Sugar
  • 20 ml Water
  • 240 ml Milk
  • 3 tbsp Boba Pearl
  • Ice Cubes For 2 servings

Instructions

  1. Cook raw boba pearl according to package direction. Set aside. Or you can use ready to eat boba pearl.

  2. In a small saucepan bring to boil palm sugar and water until all palm sugar has been dissolved and the texture is syrupy. Turn off the heat and let cool at room temperature.

  3. In a glass add 1,5 tbsp boba pearl. Fill the glass with ice cubes fully. Add 60ml espresso and half of the palm sugar syrup. Add 120ml milk.

  4. Boba pearl coffee milk is ready to serve.
